Wow, I love how detailed this video is! 🍊 Japanese persimmons (Kaki fruit) are such a delicious treat, and learning about the process of drying them into Hoshigaki is fascinating. The chewy texture and natural sweetness really make it a perfect snack. Definitely excited to try making some at home after watching this!
I watched the Korean one and this Japanese after that, a big different quality of processing. I don't know how is the taste of both because i haven't try it yet, but Japanese jobs is much more carefully and quality. Well done, hope the taste is good too. Thanks for the videos.
Interesting comparison! It's fascinating to see the different approaches in processing between Korea and Japan. Japanese methods do seem to focus heavily on precision and quality. Hopefully, the taste lives up to the impressive standards! Thanks for sharing your thoughts-it's always great to learn from these videos!
Persimmons are high in dietary fiber, particularly soluble fiber, which supports digestion by regulating bowel movements and promoting a healthy gut. This can also help with weight management by providing a feeling of fullness.
I’m on my fifth year attempting to make Hoshigaki. It’s a labor of love for me 😊 Many times they have molded, so this year I sterilized so hopefully it helps. Thank you for the video 🧡
It's very interesting and satisfying process... but How do they not rot? You don't sterilize them. I've been doing this for years, but without sterilization in boiling water they can't dry.
Absolutely! The level of care in the processing, from GPPs to drying and hygienic packing, really stands out. It's impressive to see such high standards in every step of the process. Quality control like this ensures the final product is top-notch! Great observation!

I have 8 pieces of persimmons and trying to dry using the hoshigaki method. It’s my 2nd week of drying. I’m curious how will they turn out. Never tasted them. I liked the fuyu varieties.
Hi @jjdeadhead. Hoshigaki is only made with astringent persimmons, as the drying process concentrates the sugar in the flesh, and astringent persimmons contain more sugar than non-astringent persimmons.
Dried persimmon fruit turns brown. How can dried persimmons stay orange without turning brown? Additionally, dried persimmons often exhibit a white crystallized sugar accumulation on their surface (appearing as if molded), but in this case, there is no such sugar buildup. How is this possible?
Minha irmã me enviou um vídeo. ( Hino 305- CCB) 🎶Oh! Que Fundamento em Jesus Cristo temos, É Ele a esperança do eterno porvir; 🎶 Belíssimo trabalho . Bençãos Deus 🙏🏻My sister sent me a video. In it, a person placed almonds in dried persimmons. I saw it was dried persimmon because someone wrote in the comments. I looked and found some people doing this process at home. When opening this video, what caught my attention, besides the process shown, was the music. In the church I attend, Christian Congregation in Brazil, there is this melody in the songs. (Hymn 305- CCB) 🎶Oh! What foundation in Jesus Christ we have, He is the hope of the eternal future; 🎶 Beautiful work. God blessings 🙏🏻

Thanks for your nice comment. Hoshigaki is tender, succulent, and moist. I really like it. Let's try it someday.

Outstanding. Very finely processed and GPPs and drying shade and packhouse hygienically the best.
Thanks for your comment ❤

What are these plastic brackets that you use to hang persimmon stems?

Thank you, does it matter if you use the astringent or non astringent persimmons? When is the best 'ripeness' stage?
