At 3:44 - those are nice cyrtostachys renda, the sealing wax palm. They're native to Malaysia and Indonesia. Now often planted in other parts of the world, they're beautiful and often very expensive.
Harvest, pulp, dry. That’s called pulped natural but you need lots of sun and space to dry them. Raised beds or concrete patio and you have to rotate them so they dry evenly. Before you do that you're supposed to float them to remove bad cherries and ones that arent fully ripe. You need a moisture meter. They are done between 12-10% moisture. Too wet and they mold, too dry and they lose flavor. Then you remove parchment, mill/sort, then bag. Use magnets when processing the dried beans and in the roaster hopper to remove nails and stones etc. In johor they grow a mutation of liberica with up to 8 beans per cherry.
I've already tested the coffee at your coffeeshop and it tastes really different and authentic. Next time i stop by to have my lunch, i will buy a packet.

You need a better roasting machine. Electric with solar panel like stronghold with air filter, loring, or probat with cropster software. You can't sell certified organic coffee if your roastery isn't certified too.
