Should have mentioned this in the video (but is listed in the recipe) make sure you opt for Dry Marsala vs sweet (although sweet works as well just tends to be a bit sweeter) 😊
How long will the Marsala wine last being opened? Since this recipe only calls for a little of the bottle, don’t want to waste the whole bottle.

I literally was just typing out this question. When I can find Marsala wine, I'm asked if I want dry or sweet. I never knew if it matters and I tend to buy the sweet. Thanks! 🤗

Hello, I enjoy serving a beautiful imported Sicilian Marsala as an aperitif to whet the appetite. Laura’s recipes are always a favorite of mine. Just a tip, use only imported Italian Marsala. There’s is a big difference. Bon appetit

Sorry Laura, I wash my mushrooms and let them set in a strainer for an hour and I have no problem with my recipes. Love your recipes. Also, I love the intro music.

I wanted to share with you. I recently discovered your videos, but I am 58 and have Never cooked from Scratch. I handle any Grilling, and my wife handles the kitchen. I Really wanted Chicken Marsala, but she wasn't up to cooking it. So after watching videos from other Chefs, I found yours, and I Followed it. It was served over White rice, and the Family LOVED IT! There were Only EMPTY plates. I used a nice Marsala, not the Marsala for cooking. The result tasted Amazing. Thank you So Much! Trying to decide what recipe of yours to Make next. My dad’s Piemontese family from Turin added a few drops of cream to the sauce and served it over rice.
Here in Germany too, Germans (i’m Italian) often do this and thus receive a complete dish. :)
A little cream is always nice.

This is one of my favorite dishes, and it's easy to make -- high reward-to-effort ratio 😊. Dusting the chicken pieces in flour on all sides *meticulously* is extremely important for the meat to turn out tender and not stringy. I dust meat, and sometimes fish, in flour if I want the rendered juices to have a somewhat gravy-like consistency -- and always for braised or stewed meat.
I made this today for dinner. I did use chicken breast because I found that after I put the beef stock in and reintroduce the chicken to the pan they absorb all the tasty juices and they become super tender while they simmer. I used to slice my mushroom but I cut them in quarters and used 3 types of mushroom, way better than sliced! I love mushrooms so I used 2 lbs. I added this dish with my homemade Italian dressing/ salad and it was wonderful! I appreciate your content! God Bless!

I've made Chicken Marsala numerous times, and I love chicken thighs, but for whatever reason, I always use breast meat. You are the first one to use thighs, so now I feel confident enough to do the same. I don't know why I never tried it before. I could eat Chicken Marsala 365 days a year, it's just soooooooo good.
What a great idea to cut the mushrooms into quarters. Adds a nice bite rather than a limp slice. I'm going to have to make this dish with the thighs as well. Laura...you are a breath of fresh air when it comes to breaking away from the norm. Been following you for a couple of years now, Kudos to you!

Laura, I love you and your recipes, but I do have to correct you that you can wash your mushrooms, do it fast and they will only absorb about 2% water. I have been washing my mushrooms for years and they brown up beautifully!

I've been wanting to try new things from other cultures amd regions. I'd really like to make this. I love a mushroom 😋 and I've never had Chicken Marsala.
This was delicious. I used filleted and pounded chicken breast. Next time more mushrooms and less onion (mine was pretty big.)

I didn't notice at first the intro was gone. My mind was locked in on the fact, chicken marsala was being made! I had to go back to see that in fact it was gone 😢, I love both whatever one stays I wouldn't be disappointed. Loved the recipe ❤️
Rubbing mushrooms with a damp towel doesn’t get rid of all the dirt.
Rinse them under running cold water and pat dry with a paper towel. Minuscule water absorption. We are soaking them for an hour!

Alton Brown demonstrated years ago that you can (and should) wash your mushrooms! They really do not absorb much water, as he showed by weighing the mushrooms!

Nice. Never thought to use beef stock. I've used half and half or heavy cream. What would be nice to see is how you save your sauce. so you just bottle some, refrigerate and use it w/i a short time or go through the whole preserving process. A video on how you do it would be nice to see and instructional as well. Grazie!

Yummm..Will be making this soon. However...its okay to put shrooms in water. They're about 80% water anyway, so putting them in water won't make a bit of difference when your cooking them. That was an old wives tale. And if eating fresh, rinsing them will make them cleaner than wiping with wet paper towel. (And maybe healthier, too)

I do wash my mushrooms. But, I spread them out on paper towels to dry. No problems! Might need to sweat/cook them a little longer, but better that than eating the manure they're often grown in!
