Collard Greens and Spinach Balls Ingredients
1 cup frozen Collard greens thawed and drained
1 cup frozen Spinach thawed and drained
1/4 cup onion, chopped
1/4 cup Olive Oil
2 large eggs, beaten
1/3 cup seasoned bread crumbs
1/4 cup grated parmesean cheese
1 tablespoon Pam's Prep All-Purpose Seasoning
1 teaspoon dried thyme
1 teaspoon dried oregano

Yummmmm! Low carb, too! Ms. Pam, bacon isn't in the ingredient list, so I was tickled to see you add it!
This would be great to add to our upcoming Passover dish as a bitter herb w/ our lamb.
Would you use this as an alternative to what I call the matzo and bitter herb/horseradish sandwich?
It might work if we substitute matzo meal (kosher for Passover) for the breadcrumbs. No cornbread mix, either.
I noticed in the video that bacon was used (not in the recipe). Not an option.
Because of the parmesan cheese, it's a *dairy* dish so it would have to be served sometime *before* the meat.
(Or you could omit the cheese.) 😁
Interesting idea.
PS When I referenced cornbread mix it was because of a viewer comment that she would use sweet cornbread mix instead of breadcrumbs. We don't eat corn during Passover.
Don't forget the black pepper! It actually multiplies the nutrition you absorb from your food, so it's good to add it to anything it's compatible with.

Love it, it's like a very delicious crispy treat or snack but at the same time, I am getting very healthy food, but, it's a finger food that I can eat instead of empty calorie stuff like chips.
Love collards, don't like spinach but I like spinach dip so I will try these this week. They look good.
In the beginning, Esthetically on its own, I wasn't sure; but watching how she made it, that right there is good; Texturally, and taste, I haven't made it or ever had it, I can Guarantee those taste real good.
