Raw Craft with Anthony Bourdain - Episode One: Borough Furnace

  • Anthony Bourdain and The Balvenie visit Borough Furnace in Syracuse, New York, a metal casting workshop founded and operated by couple John Truex and Liz Seru in 2011. The skillets are handcrafted individually in small batches, using a traditional casting process that has been updated for environmental responsibility. One skillet takes approximately 6 to 7 hours from start to finish. John makes all of his own equipment. Each skillet is cast in a “skilletron,” a barrel-sized metal melting furnace that burns Waste Vegetable Oil at 2700°F to melt scrap iron. By using old fryer grease to fuel their furnace, they eliminate the massive energy consumption of a typical metal casting operation. They also only use recycled iron as source material. Episode directed by filmmaker Rob Meyer.
    The Balvenie’s longstanding alliance with craft is a result of the distillery’s dedication to the five rare crafts of whisky making, which allow them to achieve their distinctive taste and exceptional quality. The Balvenie still grows its own barley, still malts in its own floor maltings, employs a team of coopers to tend its casks, a coppersmith to maintain its stills, and has in its service the most experienced Malt Master in Scotland.
    Warehouse 24 offers its members access to exclusive events, early notice of new product releases and insight & knowledge from The Balvenie’s team of craftsmen. Join here: us.thebalvenie....

      I feel this way except with all his shows. I've been binging all his stuff when I can for a few weeks now. Such a tragedy that he was in so much pain but his legacy is something to be extremely proud of. He lived about as full a life as anyone does, even if it was too short.

    I discovered Borough Furnace online completely by accident, read about John and Liz and their business, ordered one, waited for nearly 9 weeks and the skillet arrived as promised - on time and beautiful... There is something to be said about the art of hand crafting - because no two items are identical, therefore yours is unique. I been using my Borough Furnace skillet for many types of cooking styles including braising. In one word: AMAZING... After seeing this video, time to try Steak Au Poivre...

    Interesting but doesn't hold a candle to his other stuff. Kudos to him for trying to promote things he was passionate about. And yes, it killed me to erase "is" and change it to "was". It didn't touch what I'm passionate about, but I'll continue this series to see what he wanted to promote. All hail Anthony Bourdain.

    Truth be told I probably have a man crush on AB. Seems like the kind of guy you wish you were friends with. And I totally see how this is an AB show. Hand crafting seems to be making a comeback so I'm surprised this show didn't get picked up on TV, maybe it still will. I love the concept though. We are such a made in China society that wants everything right now, that most of us don't even know they make things by hand any more. This shines a well deserved light on the few craftsman we have left.

    I noticed they did sand the inside, but I wonder how they compare to an old Wagnerware or Griswold. Those old ones looked like they were machined flat on the inside, and they are very smooth. Modern ones tend to be missing that finishing step. Lodge for example is just as rough on the inside as at is on the outside.

    $280 for a 9" cast iron skillet? You're off your nut!
    You can get a polished Wagner for $35, and a Lodge that does all you need a cast iron skillet to do for $10.

    • @OMGWTFLOLSMH
      @OMGWTFLOLSMH 9 років тому +2

      +dLimboStick Too expensive for me too, but they're handmade and designed with a cool touch handle. You won't find anything similar for $10. They're still in business and get lots of good press so they must be doing something right. Some people buy Aston Martins. I get by with my Honda.

    • @dLimboStick
      @dLimboStick 9 років тому +4

      OMGWTFLOL
      Like I said, you can get a polished Wagner for $35 for a 12" pan. At least Aston Martin can justify their price with the engineering and the hand crafting. There is no justification for a $289 price on a 9" cast iron pan. They didn't invent a new material. They're using cast iron, which has been around for thousands of years. The "cool touch" handle is not their design, they spent zero engineering time on that technology. The only reason to purchase this pan is to brag(?) that you spent $289 on a piece of cookware.

    as always brilliant!!! but Aluminium Oxide ??? That was not necessary ! after such a great job, to rap it up in poison was really a flop !

    Somewhat trivial and not video topic related, but I gather Liz is a vegetarian? She didn't touch the finished Balvenie and peppercorn steak dish and seemed uncomfortable with the scene. That aside, it was an interesting video with a neat topic.
    Cool skillets and good video.

      I had similar thoughts about Liz looking uncomfortable. I'd eat the steak & finish The Balvenie for her. Cool to see stuff handcrafted but much less expensive from Lodge...just sayin

      Just sayin.... You really think that a 2 person shop is going to turn out cheaper goods than lodge's factory can? On furnace 's site, the pan that they made in this video goes for $280.00. You have no idea what you're talking about.

      Unless you intended to write MORE expensive. If that's the case then I'm with you. They'd have to bring in the same kind of automation lodge uses to bring the cost down before I'd think about one of these.

    You could do this work somewhere where labour is cheap and seriously reduce the price and make a lot of them. As long as you do good quality control.

    Spare me....there's a sucker born every minute. Great old, seasoned cast iron pans can be had for a few dollars at any Goodwill in America--I have a set and they're wonderful!

      +blipblip88 Yeah, but these ones are made from used disc brakes and vegetable oil. Wait...shouldn't they be less expensive then? I agree, it's a bit of a scam but some people will pay more for handmade items crafted with the environment in mind. Not you or I, but some people.

      The surface on those is bumpy as hell though. So you may benefit from grinding that down
