Food Truck Dishes from around the U.S. (Veganized by Dustin Harder)

- The backstory: Dustin Harder is a good friend and one of our favorite chefs. Earlier this year Duncan shot a trailer for his new cookbook, Simply Vegan. In exchange for the help, Dustin agreed to cook for a dinner party at our apartment in March. We couldn't release the episode right away because at the time, Dustin was a candidate for a cooking competition show, The Great Food Truck Race. Dustin used the dinner party as an opportunity to test out the menu he developed for the show, a medley of veganized food truck dishes inspired by regions of the U.S.:
California Flatbread with Artichoke Pesto
Grilled Romaine Alabama BBQ salad
Maine Lobster Rolls
Southwest Chickpea Hush Puppy Burgers
Philly Cheese Steak
Shamrock Canolis (not from the U.S. obvi... it was St. Patty's Day)
Unfortunately, Dustin didn't make it onto The Great Food Truck Race--their loss! But he remains an underrated talent both in the kitchen and in front of the camera. He is currently working on his second cookbook, Epic Vegan, coming in 2019.

I am just remembering Gordon Ramsay refusing to eat grilled lettuce.
Mark Bittman just released a cookbook about grilling and I heard him interviewed today and he was talking about how great grilled romaine can be if it's done correctly. In fact, he was most enthusiastic when talking about the non-meat items that are featured in this cookbook (including watermelon, which I thought was so interesting!)
i remember that. gordon made fun of grilled lettuce. and the whole restaurant laughed.

Finally a new video! I love this channel. Holy vegan cow - all that food looks SO incredible. Dude needs to bring his truck to Sacramento. BUT... BUT... premade guac is a straight up sin. Duncan, I do like how you colorized the food while keeping everything else B&W - nice! The dude in the plaid and glasses I think would enjoy the book: "Taste What You're Missing". Actually, anyone interested in food would love that book.
This guac actually wasn't pre-made, as I agree with you ;-) My point was for the truck competition (specifically speaking of the competition) being able to grab items that were pre-made would help me in my time to get food selling, thats all

The food looks great, but we don't call white sauce "Alabama bbq sauce" because it's not bbq sauce. Big Bob Gibson here in Decatur, AL has the best white sauce, they even bottle and sell it in stores.

Also meant to ask (maybe this should be a Vegan Roadie question and not an SYDV one) but when is The Great food truck race episode TVR is on going to be accessible/shared/televised? That’s a Food Channel series, right? I’m really not sure-the only cooking shows I watch are vegan UA-cam channels. When it comes to food I live under a rock (albeit a rock made of fried tofu simulating the texture and taste of chicken).

Truck grill cornbread salad!
Grilled (vegan) Cesar is one of my favorite things. It makes such a lite lettuce almost meaty, or more substantial to say the least. This one is definitely next level. It's like comparing the grill on a Mac truck to that on a 4wd. I don't know anything about trucks Btw.
