I do the same. I have a friend who owns a Thai restaurant (Thai Chef in Schertz Tx) as well and will bring him whole fish (usually snapper) to prepare. I don’t catch yellowtail in Texas, though. But I really like Vermillion snapper in the 2-4 lb range. I’ll have to try your friends place when I am out in Florida

Should of had a knife in his hand alos and had him do it with you step by step how I learned,Pap handed me a crappie he took one when I was around 14 and the rest was history,maybe something you could do in the future .
