    *Note: - in video he is cooking for nearly 60 people
    The first ingredient is ghram masala powder
    ghram masala powder ingredients
    1.Coriander seeds 2. Green cardamoms 3. cumin seeds(jeera) 4. Cloves 5. Cinnamon
    6.Black pepper corns 7. Fennel seeds
    the second ingredient is ajinomoto or MSG (Monosodium Glutamate)
    the third ingredient is biryani masala
    biryani masala ingredients as per video (semi textured powder)
    1.Cloves 2. Green cardamoms 3. Cinnamon 4. black cumin seed (shah jeera)
    authentic Biryani masala ingredients
    1.bay leafs 2. black cardamoms 3. Green cardamoms 4. Cinnamon 5. Black pepper corns 6. Cloves 7. nutmeg 8. star anise 9. black cumin seed (shah jeera) 10.dry ginger 11. mace
    the fourth ingredient red chilli powder
    the fifth ingredient crystal salt
    the sixth ingredient ginger and garlic paste
    the seventh ingredient mint leaves and coriander leaves
    the eight one green chillies paste
    the ninth one fried onions
    the tenth one cooking oil after mixing well
    final add some plain yogurt

    I cooked the exact way mentioned here and it really turned out to be very tasty. One additional thing not to forget is cook it on slow heat, put an extra pan below the pot so that the layer below does not burn

    Uprated. I love this. I started learning Indian cooking less than three years ago. I am in France. The French do not generally like spicy or exotic foods and my Parisian spouse is picky. I had a hard time at first finding the spices and ingredients but it was fun. The methods are largely new to me. The biryanis I have made, as long as I followed good videos such as this closely, the food was wonderful, and I like vegetarian and dessert dishes from India, too. Thank you so much. I was a chef's assistant here in Paris on a half-year contract and I learned so much, and if people think this is dirty or unpleasant, they have not worked in too many kitchens! :)

    this is called real chef!! they don't need any scale or masurement cups to measure anything! their hands, eyes, and mind have perfect measure? i don't use them either. but in dum biriyani extra water shouldn't be use like that and the lid should be airtight thats why they call it dum biriyani. any i liked it soo much. will try this way too. i can eat them 5 days a week or maybe 6😋

      True. Adding water takes away the taste. But then he takes a liberty of Not putting it on a very Tight Dum.
      Big No to AjinoMoto.
      Also... i like making it on Coals and OfCourse with Goat MUTTON.
      Nonetheless very good recipe and preparation.

    The dish looks terrific and mouth-watering! And don´t pay attention to the pseudo critics, who for the major part, don´t even know how to make or eat "Toast"! They would probably choke, on the bread crumbs!! LOL!

    why is it that there always had to be unpleasantnesses in these videos, I think its an awesome dish done authentically ,make it at home using the rubber gloves and sterile equipment and see if it tastes the same, I doubt it very much, the problem with modern culture is everything had turned into a protected nanny state so the body no longer builds up immunity to bacteria, let and let live,cook and enjoy and if you don't have anything constructive to say then rather be quiet !

      Leave something to the heat. That much heat will kill even the prions. Also nothing is stored in the refrigerator.
      Everything is prepared in morning. If its a timely process then the workers start at 5 AM in morning. And every piece of that chicken is cut the same morning.
      So there is less chance of fermentation and bacterial growth.
      As of those complaining about it being dirty they have never cooked in their life. They should enter the kitchen and see how much of a mess they can make.
      Ramsey hell kitchen looked pretty dirty and messy. But isnt. Because a piece of onion on the table is not dirt. Its the same fucking thing on the plate.

      ⁠ Nothing kills prions. Brains that have been infected with bovine spongiform encephalopathy still exhibit the infection after being in formaldehyde for years. There’s a reason why people get food poisoning. Fermentation takes days to months to take place. Bacterial growth can take place in 20-60 minutes. All of you can literally look this information up. That being said, food looks good even if it does give me botulism.

    lol i love how everyone comments about the hygiene. im from hyderabad (where this video was taken), but ive lived in the US for more than 95% of my life. my mom makes biryani just like this, all the way down to how everything is handled. i have never once gotten sick from eating her food. you guys can all gag in disgust, but this shit is the best food you will ever eat in your life. more for me :)

    In my opinion , the main thing to remember is Garlic , Ginger and Turmeric are the most healthiest food , so eat a lot , a lot of it and Pakistani and Indian food seems to be the best platform . Looks awesome as usual !

    Just ten years ago I was a noob of Indian food and I was just ignorantly giving a praise to Chiken Tikka Masala as the one and only lord of indian food. But one day my indian friend gave me a lecture, showed me a myriads of indian foods, the world spanned by infinite combinations of spices, and I know now that the true lord is Biriyani. Praise to Biriyani!!! Death to all who disses and underrates her.

    we arabic people know that best food and way to cock food is in India . We have an old habit that the lunch meal is rice with vegetables broth and meat .I think in the past we were impressed with their food culture and that where our traditional came from

      The Biryani was invention of Mughal cooks who used to cook Mutton Biryani for the Mughal army. It was easy to cook using just Goat Meat and Rice and apart from being tasty it was a full course meal.

      +Paul Murray In southern india in some meat shop they put turmeric powder on the meat to avoid antibacterial action.When we cook meat we used to cook the meat with salt and turmeric powder , which is antibacterial .some spices are added for digestion and some are added for flavour and texture , each spice has its unique action in food .

      Destroyed arteries?? what are you talking about? I eat meat every day, and a lot of it. I dont eat as much vegetables compared to meat. Akuma4u why no pork? I eat a lot of pork as well and nothing has ever happened to me, do you have a reason for not eating pork?       hey - well personally i was brought up in a muslim household so pork is forbidden so i never ate it , no point in starting now. Also - if you do your research, you will find pork is the most unhealthy meat out there. Pigs are scavengers. Pork contains a lot of bacteria and parasites and the meat itself can be toxic due to the diet of the animal. Pork is the cheapest meat as well due to these reasons. There is lots of info out there on pork and how and why it is a low grade protein.

      Chicken, garam masala, msg, cinnamon, cloves, shahjira, elachi, red chilli powder, crystal salt, biryana leaf, nutmeg, ginger garlic paste, coriander, mint leaf, green chill paste, cilantro, brown fried onions, sunflower oil(but I would recommend clarified butter). Now mix it well. Then add yogurt and lemon juice to make it runny.
      Then add salt and spices to basmathi rice and boil it. Mix the chicken mixture well. Add some water from rice. Mix again and cook slightly. Now you should boil the rice to 50% and start laying it on the chicken. Continue laying it progressively while the remaining rice cooks. The middle layer should be 75% cooked and the final layer of rice should be completely cooked. Seal the dish and cook for 20 to 30 minutes to cook the chicken. Top it off with fried onion. Finally pray to God that it turns out well and tastes good

      Rupali Karekar lol of course you'd sneeze! There are so many spices around! As a fellow restaurant cook, I often sneeze at work (and I work in the US!) , but I cover my mouth of course. You guys should try working at a big kitchen, we use some industrial pots and huge sticks to move food around!
