I tried the demo after watching your video. The title is interesting, but really too cumbersome for my tastes. Nice video though :)

How do you equip fishing bait?

If I recall, once you craft it in your inventory, it should automatically be used by your fishing pole. It will be indicated in lower right corner.

I didn't encounter boats in the demo. But I don't think there are boats in the game as of now.
