Basic potato (Aloo) curry - if you can cook this you can cook almost any other Durban style curry

Potato curry or Aloo curry is possibly one of the most basic Durban style curries that transforms the humble potato or aloo into one of the meals that strikes a chord with almost all Indian households. Smashed potatoes and rice is how Indian children are introduced to curries and potato curry therefore hold great nostalgia as well!
Ingredients
5 med to large potatoes (1kg)
1/2 cup oil
1 small onion, sliced
curry leaves
1 small tomato
1 tbs mixed masala
1 tsp hurdee
1 tsp salt
Dhania to garnish
Serve with rice or perfect for roti rolls accompanied by some crunchy vegetable pickles

Yes it must be difficult to keep it going when it gets cold. We have frost here as well so we use frost cover on the curry leave plant for the winter.

I make mine with half a teaspoon of mustard seeds and red chillies but this is a lovely alternative. This with fried dried snoek snd red chillies is bomb also

The curry leave is optional and can even be left out altogether. I have read that curry leaves bring a citrus flavour/aroma so perhaps a substitute is just a dash of lemon juice or a sprinkle of lemon or lime zest.

Can you please tell us what's the basic spices to have if not using the masala mix, and what would the ratio be for using it for a family of 4 and how much chicken for a family of 4 please?
Hi usually I use a range including pure chillie powder, dhania powder, jeera powder, hurdee and food colouring and mixed masala. You can also replace or swop out dhania and jeera powder sometimes with garam masala (which also contains other spices) or with the whole seed spices. Can also add some biryani mix powder or whole biryani mix. I will quickly try to get you the ratios tomorrow morning.

@@Bekind542 Hi, for a family of 4 you want to be using the equivalent of about 2 tbs of mixed masala - but this depends on how spicy you eat your food. If you start the with the individual spices then a simple mix to try for would be approx. 1/2 tsp each of pure chillie powder, dhania powder, jeera powder and biryani powder mix. Then add the tsp of hurdee for colour. Alternatively you can subsitute the brown powders (dhania, jeera, and biryani mix) with 1 &1/2tsp garam masala. Play around with the ratios and see what works best for you as well. If you like your food with more heat you can use additional pure chillie powder etc.
