is it bad if i put the ink after the initializing process?

During that 70 minute initializing process the inks are drawn through the printer lines. If the ink isn't installed and that process begins, air could be run through the lines and potentially damage the print head.

Can you have more than one printer connected? My mom has the printer but I want to use my computer to print something and she said she saw somewhere you could only connected one computer.

You can! You can only install the included software on one computer but you should still be able to print directly to the Epson printer from any computer!
