There are several different ways to turn waste water into freshwater. The example shown was by use of settling tanks, which can take longer than other methods. There is also evaporation distillation and also filtration. Each one of the methods are good, but you would have to decide upon which one fits your individual needs best.
I believe that you have the concept of settling tanks down to some degree, but the settling tanks will eventually have to get cleaned, so you would actually want a secondary set of settling tanks. This system also takes up a lot of land mass.
