My problem with this trope is that it sometimes falls a bit flat and feels boring.

I can totally see this. I've read a lot of friends - to - lovers romances that fall flat, but its often because the reason that they haven't crossed the line before doesn't hit. That's why the reasoning for them never crossing that line before and the catalyst that prompts them to see the other differently needs to be detailed, realistic and shown on page. Because if I don't see those things my brain goes, "Yea, this isn't doing it for me."
