Oh yes reread Harry Potter! I’ve found that it hits so different as an adult. And ok, there are 7 books and some of them are long, but they’re easy reads! Alternative: if you do audiobooks, and if you have Libby for audio loans, the Jim Dale narration of the series is great!
Totally agree about "My Dark Vanessa". All of the dark morally black/grey books I've read haven't made me feel uncomfortable at all like that book did. I loved it though because I think the author did a good job at portraying (or "expressing"? couldn't find the right word 😅) all of the complex emotions and events that goes on in situations like that....I found "The Seven Husbands of Evelyn Hugo" to be very unique. I felt like I legit watched a biopic (in my mind) after reading that book...I'm excited to put the Kristin Hannah books you've mentioned on my TBRs for next year! And I'm hoping to get into fantasy more. I almost DNF'd ACOTAR, but I enjoyed "Her Soul to Take" so, maybe there's hope 😊
You should try daughter of the moon goddess. I never read Harry Potter as a kid, but recently read it as an adult. I think it would be cool if you could reread them to see how you feel about them now but maybe try it slow and steady so you don’t feel pressure.

I did like The Next Mrs. Parrish but not as well as the first but definitely better than The Housemaid series
