  • Kaya or Coconut Jam is a popular and delicious breakfast toast spread in Malaysia and Singapore. A perfect Kaya has to be smooth from hours of stirring. I have preciously shared some short cut recipe, but the traditional recipe and cooking method are the best. For this recipe, I opted for duck eggs for richer tasting Kaya. I have reduced the amount sugar and make some caramel instead. This recipe will yield thick, smooth and glossy jam.
    Ingredients
    2 Cups (6 to 7) Large Duck Eggs or 8 to 10 Chicken Eggs
    2 Cups Coconut Milk
    1 1/4 Cup of Cane Sugar
    4 Pandan Leaves, washed, dried & knotted

    Hi, I try your recipe and the results are great. May I know if it is normal for bubbles to form when cooling as well as when kept in fridge?

      mohamad haris bin johari You're welcome. Gula Melaka will alter the Kaya taste though...might still taste good, but I'm not sure the exact amount of sugar you need. You can always use less and adjust as you go. Good luck!

    I keep stirring but ended up cant get a smooth kaya paste. How can i make it smoother and creamy?

      +candy can123 Maybe the heat/water on the bottom was too high. You can also blend the kaya, but the texture will be slightly diff.

    thanks for your great tutorial and recipe, i found out, using palm sugar, makes the jam not so smooth, so im using blender, and add a bit milk, coz mine is to dry a bit, im using 100gr palm sugar and it is still very sweet and too dark, im in malaysia use palm sugar called gula merah on the packaging, next time will do 70gr palm sugar only, mine come more dark than yours coz the difference of the palm sugar type maybe

      i have try using it with bisquit it come fit my taste the sweetness, if just try it without anything it will be very sweet, but the palm sugar im using is to strong and make the egg very fast cooked, i think 50gr palm sugar+50gr white sugar will do

    the philippine version, in my province of quezon where coconut industry is the main source of income, we never use eggs,,just coconut cream and brown sugar with pili nut or 100 per cent cocoa..

      Airtight, not stirred, not reopened a few weeks if mostly sugar and coconut milk as preservatives ... Once opened, consumed within a week (?) ... Have to ask mum, usually all gone lol 😉😆

      I would start with caramelized sugar and beat with eggs in machine ... Reserve some caramelized sugar at end to whip to glossy ... But yet to try it out...

    hi, i tried but my kaya turned out to be like scramble egg. It is totally not like the smooth texture you have got. Which made me pretty upset. Is there anything wrong in the process that I can fine tune?

      Cecilia Aw If the Kaya turned "scrambled egg" like, the most common problem is the pot is too hot. If it starts to curdle too quickly, add more water to the pan. Make sure you use a heavy-bottom pot. Do not whisk, just stir with a wooden spoon constantly. It should work.

      Cecilia Aw Yes, the water should be just simmering. Give it a go again, be patience:-) Just remember, the first 30 minutes is very crucial, keep stirring!

    How long can it last if it is not refrigerated?

      During the Winter, I leave them on the counter for about 4 days, Summer max 2 days.

      Unfortunately, this recipe require sugar. Hence, I don't make them often and the amount of sugar in this recipe been reduced significantly but still yummy!

    hi, did u use the egg whites too? wouldn't the egg whites seperate and cook itself into stiff hard eggy parts inside the jam?!

    i tried it but it not comes smooth as like jam...the egg is separately cook idont know y...it form lumbs ...

      Thanks for the feedback. There are few issues with regards to the above; 1) You have to keep stirring the jam. 2) Use a heavy-bottom pot. 3)Use the lowest temp/fire setting & keep topping up with water if it's too hot. Hope these help. Thanks.

    I have only pandan leaves powder, how many gr should I use? And for how long will the jam last in the fridge?

      I've never come across Pandan leaves powder...I suppose you can add 1/2 tsp for the fragrant. Hope this help and good luck!

      The heat is too high..use lowest heat setting and top up with water. (make sure you use a thick bottom pan/pot and keep stirring. You can always use a blender to smooth it out. Thanks.

    Hey i made this yesterday following one of your older recipes on your blog. The kaya turned out nice but the flavor wasnt too strong and the colour is pale green. Im not sure what i did wrong the consistency was very thick and kaya likethats why i took it off the stove, didnt want to burn it. i did increase the temperature towards the end tho cause it wasnt thickening up. oh and i also did it on a double boiler. i think all up it took me about 40 mins or so to finish it too

      neetudolly The older recipe/video that I hv shared used Turbidano raw sugar to enhanced the flavor. Did you use that sugar? The color won't turned out as dark compare to this traditional version. The latter has caramel in it. To make Kaya, the temperature has to be the lowest, if the Kaya starts to thicken/curdle too quickly, add additional water to the double boiler. I would suggest you try this one out and I'm sure you will like it. Anyway, thanks for the feedback and comment. :-)

    I failed once doing this, taste are so not good and the eggs dried after 1 hour stirring idk why I followed the recipe and introductions now I wasted 8 eggs

      Most likely the heat was too high..use lowest setting & top up with cold water, if it's too hot. Hope this help.

    Hi! How often should I stir the kaya? Every 10 minutes? And if i make only half, will it take only half the time to cook as well?

      I stir them frequently..maybe every 1 or 2 minutes. The cooking time should be less, if you only make half.

    I have 2 questions.
    You have another Kaya recipe. Is this one better than your other recipe?
    Does this jam need to be stirred constantly for 1 1/2 hours or occasionally? If it's constantly for that amount of time then, WOW! That is a huge task for that long a time!
    Anyway, I definitely want to try this and the eggs with soy sauce.

      Cheryl S. I like both but if I have time then I'll prefer make this one cos it's richer and sort of traditional style. Yes, you have to stir them constantly.

      +‫وحدة نين‬‎ You have to stir frequently on lowest heat, and do not let the water boil. Add cold water to the pan, if needed. Also, you can blend the Kaya for a few seconds.

      I don't have the recipe with 2 eggs.(I'm assuming chicken eggs) You can do the math example; 2 cups divided by 10 chicken eggs times 2 eggs? So, 1/4 cup of milk. You can adjust sugar accordingly. I'm not sure it will turn out okay though. You can try it, use a stainless bowl instead of pot. Thanks.

      C CD Yes, you can use chicken egg. You'll need 2 cups, probably 8 to 10 chicken eggs.

      I think coconut cream would work because it has a lot of sugar. Just fyi coconut cream isn't available outside the americas.

      Duck eggs are richer. You can use chicken eggs too.

    My mother blends the pandan leaves into a paste instead before adding it to the pot. Using caramel and duck eggs is interesting though. I'll combine your recipe with hers and see how it goes :)
