Jose's Wine Infused Bison Ribs

Bison ribs just hit differently! Special thanks to Noble Bison for the amazing ribs, cooked first in homemade Portuguese wine mirepoix. Next time, I'd go a bit lighter on the seasoning, which was too salt-forward.
