200 g spaghetti - or bucatini of your choice
150 g Guanciale - italian bacon from the pork cheek
10 g Pecorino Romano - grated
1 shallot, or 1 red onion - is purely optional
1 small red chili
1 tbsp olive oil
2 tbsp white wine to deglaze
For seasoning we need salt and black pepper according to your taste - but be careful, the bacon and cheese also contain some salt.
