- Turned a 3 pound chuck roast into burnt ends. This was a practice run for my daughter's 21st birthday party that is coming up in a few weeks.
Used Meat church Holy Cow rub. This is what I use on brisket as well

I smoked mostly with Hickory and one chunk of mesquite.
Placed the meat when grill was at 180. It was ciming and was at 220 within about 20 min. it topped out at 240. I pulled to wrap at about 2 hours and then pulled to cube the meat at about 4 hours. gave it one more hour in a pan covered then about 30 or 40 min with it uncovered to finish it off.
