  • Watch Chef Jean Pierre create a Red Snapper in a Papaya Beurre Blanc main course. From the mid-1990's hit PBS Cooking Series "Sunshine Cuisine". This is a dish featured on the "Sunshine Cuisine: Main Courses" VHS Collection released in the early 1990's by WBPT in Miami, the station that produced this national series for PBS.
    I was the composer on the series, writing the main theme and all the incidental music heard on the show.
    Another gem from my newly-rediscovered collection of my old VHS tapes in my garage.

      I felt the same way. He was as forgetful then. But still sounded the same. He hasn't learned to smoke food yet. Still no fryer. He is rich. At least I have that in my outside kitchen. Like him though. Someday, he may be a better chef.

    I'm so glad to hear that just like today, cooking back in 1993 was "so very simple". I bet a child could do it back then too.

    I love that he was able to take his tv show and continue basically the same thing updated for a new generation on UA-cam and he's still chaotic af with the same facial expressions and joy for his food now but white haired in a brighter kitchen. And digital. I really like that he has apparently always interacted with the team behind the camera, too, like he's glad to recognize that it takes more than his food to make the show go. So he's ever humble, as well. Top tier.

    Oh wow, there's our hero over 30 years ago! He looks so young here with the dark hair. Still looks good today, healthy from all the wholesome cooking in REAL BUTTER and olive oil!! 👍

    I wasn't watching cooking shows in 1993. I discovered the joy of cooking during my retirement and also found the Chef's UA-cam channel. He looks different but hasn't changed his delivery, if I hadn't know from the start who he was, I would have figured it out quickly! Thanks for posted, keep'em coming!

    This is fantastic! I'd love it if you posted more. 🙂 I used to watch this show every week in the 90's. In fact, that was what got me into cooking. I had the chance to attend one of Chef JP's in-person classes in late 2019 and tell him - fortunate timing!

    Modern chefs would call this an outdated way of cooking, but these dishes were the foundation of todays gastronomy, excellent food from this era.

      I respectfully disagree with your comment, John. What, in your opinion, makes this dish ‘outdated’? The techniques he uses in this, and all, video(s) will never be outdated. Even the most modern, expensive restaurants use the techniques taught by Escoffier in France. Sear the protein to retain moisture and flavor; turn off the heat prior to adding butter so the sauce doesn’t break, strain any sauce created in a blender to ensure a perfect mouth feel. I don’t understand (other than the plating) what techniques you consider ‘outdated’.

    Hasn't changed, thank God never needed to, testament to his character. I agree he's a legend. Why is Jean Pierre not a bigger celebrity? Is it because he has always stayed true to the cooking/teaching and not politics of fame?
