- Sharing with you our Thai red curry with chicken. Thavone came up with this recipe over many years in trying to avoid adding sugar, cornstarch, or flour into the curry dish. We are making this dish at a request of Dian Thomas who lives in Salt Lake City, Utah. Dian Thomas appeared on the Johnny Carson show and was a regular for 8 years on the NBC Today Show. She was on the ABC Home Show for 15 years. She is the author of 19 books including Roughing it Easy which was a New York Times Best seller. dianthomas.com

Dian is a wealth of travel and camping info and as you may know, back in the day appeared many times on morning shows and Johnny Carson. Thavone, I need an easy peanut sauce recipe that isn’t too spicy.
Hi Debbie. This is the recipe we use when we make Thai peanut sauce.
1/2 cup salted creamy peanut butter* (or almond butter or sunflower butter)
1-2 Tbsp gluten-free tamari (if not gluten-free sub soy sauce // if soy-free sub coconut aminos*)
1-2 Tbsp maple syrup (or other sweetener of choice)
1 tsp chili garlic sauce (or 1 red Thai chili, minced // or 1/4 tsp red pepper flake // adjust to preferred spice level)
2-3 Tbsp lime juice
~1/4 cup water (to thin)

@@Joueusee That’s wonderful to hear. Go easy on the curry paste if you don’t like spicy. You can always add more later. Add more sweet potatoes if you like it to be sweeter. Let us know how it turns out!
Thai chicken red curry was so good. I love how the sweet potato thickens the sauce and it’s so yummy. No sugar added. Definitely will be one of our monthly meal rotations. Thank you so much 💕
