I think it is underwhelming because you took night flight? Perhaps flight experience would be way different if you take its morning flight (NH110). Since they as well and JAL tend to scale down their services for night flight with the reasoning of "having better sleeping hours". This is why I prefer to take their daytime flight since you get to experience full blown service but at the expense of messing up your body clock and lose out on a productive day at your destination due to flying lol.
I think the cabin is on par with the mentality of the Japanese. Japanese money is very quiet and reserved. It's not like the middle easterners and Ethiad, who are flashy and loud. I like the ANA cabin and the food and staff are always top notch.

Timing of the flight has to do with everything. I think the flight you chose in this video left at a much later time than other flights to US East Coast that leave in the early afternoon Tokyo time. The ANA Business Class flight we took from Tokyo Narita to Washington, D.C. had the best meal and presentation. However, on another flight from on ANA Business Class from Bangkok to Tokyo that left at midnight, was the same situation as you had experience in this video. If you paid a crazy amount of $$ for this flight, it is not worth it.

Given the length of the flight and how much ANA First Class tickets cost, they should at least offer the full menu on their HND-JFK flight regardless of departure time. The abbreviated menu would only have been acceptable for flights that are around 7 hours and departing BKK or SIN late at night for HND/NRT.
The night time flight in and out of JFK from Haneda won't be the one that gets the A350 suites at this point in writing as it's for the JL 005/006 at this time. For the foreseeable future, the night time flights JL 003/004 will continue to be served by their B777-300ERs. Moreover the idea of the lighter evening meal towards the end of the flight is to allow your body to adjust to the local time and by the time you arrive it's nearly bedtime. Thus going to bed on a full stomach is not good.
It’s just substandard, especially the food! Why a lighter menu when it’s an overnight flight when people are paying the same high fare? The toilets are small. The suites are just Business Class seats with doors! The food looks cheap- like street food especially the ramen that is only worth 1500 yen! I am comparing all these of course with Singapore Airlines. I agree JAL would be a much better choice.

We're on the same page on the dining offering. Also the ramen served is a vegan-friendly, plant-based, pork broth (tonkotsu)-taste imitating ramen so no actual pork is actually in it.
That's what the First-class lounge is for. They have a selection of top notch food. Nobody in Japan will be eating a full-course dinner on a plane past mid-night. ANA or JAL First-Class regulars are the top brass of the most well-known global companies or government ministers. Senior executives want the comfort to sleep well so they can engage in business after they land. They also wish to be not disturbed by media or other strangers. None of them are interested in a full course menu or a wine-list on a plane, as they can get it anywhere. In other words, the airlines know who their target customers are and want they want.
