Wouldn't preparing the apples first be better, otherwise the baking powder is already activated? Can good toss with a little lemon juice to keep apples from browning.

I've found that it's quite powerful and I normally use 2 teaspoons of baking powder in place of 1 sachet (16g) of lievito per dolci (Italian baking powder). 2. Preparing the apples: You're absolutely right about the baking powder activation. However, I've found that slicing the apples just before baking works well for me. It doesn't take long (without filming!), and I like the freshness it adds to the cake. I also heard that American baking powder reacts in two phases: once when mixed with wet ingredients and when heated. No problem preparing the apples ahead of time, tossing them with a little lemon juice, which I do in my another video "Nonna's Secret Apple Cake". I intentionally not using lemon in this recipe as I want to feature rustic taste of apple with rum and cinnamon. In any case, the best approach depends on your personal preference.
