  • The Gaggenau Vario cooking system is a cohesive work surface created by combining modular cooktops and ventilation appliances together perfectly and extending almost infinitely. Gas or induction cooktops, grill, Teppan Yaki, steamer, deep fryer, and downdraft ventilation can sit together as one cohesive workspace. See them all on display at PIRCH.
Gaggenau's ventilation system is architecture for air. Whether island hood, wall-mounted hood, or downdraft ventilation, the 400 series represents the height of clean air management. A bold design aesthetic is maintained throughout. While highly efficient baffle filters ensure professional performance, integrated dimmable lighting adds ambiance to the private kitchen. They can even automatically determine the power required to clear the vapors and odors from the room.

Best review of cooking appliances I've seen on UA-cam - really way beyond anything for any type appliance I've seen. Bravo sir - there's a lot of effort, lots of details, and such a complete review. I hope this helps you sell tons of these as well as sell confidence in your business.

I would disagree, I really wanted to see each section actually in use, I wanted to see that the cycling heat wasn’t for instance causing a rapid boil to drop to a simmer but we didn’t see any cooking done.

Why to add the teppanyaki next to the vario flex cooktop which comes with a teppanyaki accessory which can do the very same job? At that point it feels a bit redundant. Another cool accessory to mention is the grill/griddle plate which you can use with the vario flex cooktop!

Would you recommend flush installation with the countertop or surface installation for the range top / induction units (the installation guide seems to indicate you can do both)?

Gaggenau Cooktops VERY underrated compared to Wolf and Miele.

I loved all of features from the Gaggenau. My doubt is the down draft vent, it got that front gate that lays down when the vent is raised, don´t it disturb when cooking, or you have to set a distance when installing the system?

Especially in the case of the gas burner.

I noticed that, but I’m pretty sure that was just the door to access the filter grates. It’s not open in use.

The induction top is very nice but it is a bit of an overkill. Is there really a need to have this different temperature zones when you can do exactly the same thing in a traditional induction top by simply turning down the scale and it reacts instantly?

it makes sense when you're juggling 6 pans to just slide them around, it seems like a carryover feature from their full size version.

I don’t know what this is like in practice but I previously bought a cheap portable induction burner a number of years ago, I hated for one reason only, and that was because it would cycle on and off during cooking so that for instance if you were wanting continuous rapid boiling water, it just didn’t give it to you as it would cycle on and off and the water would cycle between rapid boil and simmer. It frustrated the heck out of me to the point it took away my control of my cooking. I ended up giving it away as I just hated using it when I was used to standard gas burners which offer precise control and rapid heat change when wanted. I would REALLY hope the electric aspect of the wok burner and induction cooktop didn’t have a similar issue? It is vastly newer technology but to me the inclusion of electronic cycling of the gas could potentially ruin the precise control that standard quality gas wok burners offer.

This is a whole other category, like comparing a Yugo to a Porsche. These things are like $11,000 and are incredibly precise and consistent and adjust the power output rather than cycling as you mentioned.

Is the smooth grill top flat? It looks a bit tilted to the rear in the video? I would find that frustrating if I am trying to cook anything liquid such as eggs, pancake batter of stir fry meat that has some sauce if it all flows to the back of the grill.

    • @pirch9868

The griddle is not tilted, although it may look that way on camera.
