    Ingredients:
    1 Cup Water
    2 Cup Gram Flour
    5 tsp Sugar
    1/2 tsp Citric Acid
    1/4 tsp Turmeric Powder
    1 tsp Oil
    1 tsp Ginger and Chilly Paste
    1/4 tsp Asafoetida
    Salt to Taste
    1 tsp Fruit Salt or Baking Soda
    1 tsp Water (To activate Fruit Salt)
    For Tadka:
    4 tsp Oil
    2 tsp Mustard Seeds
    8-10 Curry Leaves
    3 Green Chilies
    1/4 Cup Water
    1 tsp Sugar
    Fresh Coriander
    "Khaman" is a very popular farsan of Gujarat. There two types of Khaman 1.Nylon Khaman and 2.Vati Dal na Khaman. Nylon Khaman is a instant version of Khaman which taste sweet and tangy. Whenever we bought Nylon Khaman from market its always very very soft and spongy. You will get best nylon khaman in Varachha, Surat. Making Nylon Khaman at home is very easy but there are few basic things which you need to keep in mind to get perfect taste and texture.
    1.You must follow right measurement.
    2.Always Sieve the flour.
    3.Add oil in the batter to make it moist.
    4.Beat the batter for good 3-4 minutes.
    5.Grease the tin or dibba with oil before you add soda or fruit salt.
    6.Steamer should be pre-heated before you add baking soda or fruit salt.
    7.Always Steam it on High Flame.
    8.Cool Khaman for 15-20 minutes before you cut it.
    9.Use Good amount of oil in Tadaka.
    10.Use water in Tadka to make Khaman very moist.
