Putting salt in the batter means it will delay in fermenting or low fermentation. Better put salt at the end.
Fermentation don't happen here...they use baking soda....which produces co2 that puffs up when heated.

She is just incredible. However, the place behind her is just nasty and full of garbage which is not at all a hygienic place to taste this wonderful dish. Need to have some cleanliness at least around eatable stalls or she can be easily located at a clean place. It should be ensured while doing so that her daily business is not affected. Done in many places.
