Amazing moist carrot cake recipe | Easy to make

- This amazing moist, soft and easy carrot cake recipe is perfect to delight your family with delicious dessert for tea!
🥘Ingredients
For the cake:
4 eggs
150 g granulated sugar
300 g all purpose flour
⅓ tsp salt
10 g baking powder
8 g vanilla sugar
½ tsp cinnamon
200 g grated raw carrots
2 tbsp chopped walnuts
1 tbsp orange zest
150 ml vegetable oil
For the frosting:
180 g softened butter
180 g icing sugar
360 g cream cheese (or cottage cheese)
3 tbsp lemon juice (optional)
📝Instructions:
For the cake:
In a bowl whisk together all dry ingredients: flour, salt, baking powder, vanilla sugar and cinnamon
In a separate bowl beat eggs and sugar until fluffy
Add oil and continue beating for another couple of minutes
Add the dry mixture and mix well using a spatula
Add carrot to the batter and mix well
Add walnuts, orange zest and mix well
Pour the batter in a prepared 8-inch springform
Bake at 180°C for 40-50 min (depending on your oven)
Let the cake cool completely
Cut the top of the cake and make crumbs
Split the cake in half
For the frosting:
On medium speed beat the softened butter with icing sugar until smooth
Add cream cheese and beat for a few minutes
Add lemon juice and continue beating until fluffy.
To assemble the cake just spread the frosting over the cake layers including the side. Chill the cake for at least 2 hours or even overnight. Decorate with cake crumbs and nuts.
