Ever heard of a Modular Power Supply?

You've probably heard of Modular Power Supply, in case you didn't know it yet this is what it looks like and it's called Modular because the cables are modular, meaning you only attach what is required. This makes it easier to manage the cables after your system is assembled as the cables are minimized, typically needed only one for the 24pin, one for the 8pin CPU and 1 for the graphics card.

Why are some plugs blue and some black ?

Usually the brand makes PCIE (graphics card) connector of other color. If you seen those like Thermaltake or Gamdias for example, the PCIE power connector heads are red.

No, and don't believe the other comment. PSU cables aren't standerized across different models (due some may have revisions) and especially different brands. There's a high chance it will fry your component if you use a different PSU cable.
