Me too! Such an underrated meal if you ask me; I think many people automatically dismiss it and say it's gross because of what they've heard from others who've never tried it, but the first time I tried it, my mom introduced it to me and I loved it man. She used to make German fried potatoes with it too that just made everything 👌🏿

The secret to getting organ meat to taste good is like any food out there.
Knowing the correct prep and recipes, simple as that.
You can take the best cut of meat in the world but if you don't prepare it right it won't be right.
If there's people out there that can make chicken feet into a delicacy than making most anything taste good is a possibility,
except maybe kidneys :) If you made kidneys taste good (and you did!) you sir are the worlds greatest chef in my book!

Marinate mollejas in fresh garlic, salt, pepper, lemon juice and a Modelo negra. Slow cook or smoke for about an hour, then char on direct heat, turning it until super tender. Eat it in a taco with salsa , onion/cilantro....straight fire.

NIINJAA...!!! Watch Greek grilling recipes for the best way to cook offal (organ meats). Kokoretsi (it will blow your mind, soooo good. I think it's even been banned by the EU for cholesterol so you know it's good haha), splinantero, frigadelia, a soup called mageiritsa, you name it. Greeks know their offal and we do it best (and of course, over charcoal). A great channel to watch, with excellent subtitles, is "Grill philosophy" - they tend to include different spices and whatnot to give their meats a different twist (still delicious I bet; but traditionally it's salt pepper oregano), the core techniques are all there. Cheers and since it's our Eastern Orthodox Pascha/Easter, in advance of Easter Sunday, Hristos Anesti ( = Christ Is Risen).!!

Dude I live in west central Texas and the best places to get real authentic Mexican food are the little hole in the wall Jalisco places. Lengua tacos is my favorite way to eat tacos man. Also, this isn't Mexican food, but beef/calf liver and onions is another favorite of mine (TONS of protein, beef kidneys too), beef heart (similar to Captain Beef Heart, but not to be confused) is also very good. The way I had it, the cook said he cooked it like a steak, and it was delicious. Chicharones are another one that I've found to be the best in this small Spanish bar in town that was old when my mom was a teenager in the 69s & 70s; they fry em there and present them on a news paper and douse em in hot sauce and it's $2; delicious. Oh and of course fired chicken livers and hearts and gizzards 🐔
