Ingredients:
- 2 chicken breasts
- 2 chicken backs
- 2 medium white onions
- 1 piece of ginger
- 1 tsp coriander seeds
- 7-8 fenel seeds
- 4 star anise
- 2 cloves
- 1/2 cinnamon stick
- 4 cardamom pods
- 6 stalks of green garlic or 2 garlic heads
- 2-3 spring onion stalks
- 1 lemongrass stalk fresh or pickled
- 1 handful asian dehydrated mushrooms (optional)
- 1 fresh red chilli
- 1 lime
- 2 tbsp cane sugar
- 4-5 tbsp fish sauce
- fresh mint
- fresh coriander
- fresh basil
- 1 pack of asian rice noodles
- bean sprouts
- hoisin sauce
- sriracha sauce
