Just have to share my super frugal haul from today: The markdown produce racks at Walmart were overflowing, so I scored 2 cauliflowers, one bunch broccoli, 2 bunches of scallions, a 3-pack of romaine hearts, and 11 perfect bananas for a grand total of $7.40. Hard to beat that these days!
@@ParkDari Pre-chopped onions freeze well because they're used for cooking so texture is not important. But I use sliced fresh scallions as a garnish on top of rice bowls or quinoa bowls. Do they taste good as a garnish after they've been frozen?

And there's also a couple of metal carts filled with markdown produce near the doors to the employees-only area. Every store is different, though, so you may have to look around or ask someone.
I just realized that your menu plan actually works for "picky" eaters - for instance, who like a wrap but not a rice bowl, or vice versa. One person can make the wrap and the other can make the bowl, just as you demonstrated - not just on different days, but on the same day, so everyone can have the form they like!
Whenever I find peppers on sale, I scrub them, dice them up and put them in a zip lock for the freezer. A pinch or 2 of peppers in a recipe gives huge flavor.
I roast mine on the grill then peel and slice and into the freezer they go. I have also placed them in a jar with olive oil and sliced garlic and into the fridge until I want to use them.
Buy a couple ears of corn, cut them from the cob. Dice your red and green bell pepper and add them to the corn kernals...........you have homemade mexicorn that sells for almost $3.00 a can where I live. By the way, it freezes wonderfully!!!
As a frugal vegan, your channel could not be more up my alley! I loved this video, partly for some new ideas and partly because one of my favorite things to do is creative cooking with whatever inexpensive, random, plant-based ingredients I either have on hand or run across at the grocery store. I don't know about you, but my plant-based lifestyle originally started after I moved to a rural area and went to a lot of country fairs where I couldn't stand that sweet calves, piglets and other livestock were being raised with love only to be sold for slaughter later. But then I discovered that not only was I glad I was no longer participating in such practices by buying meat, but I loved vegan cuisine! Plus, it's certainly an affordable way to live, and very, very healthy. One of my favorite made-up staple items is a grain mix that I use in salad combined with chopped greens and other salad ingredients, use for tacos, use as a side dish, etc. In my pressure cooker, I put one cup of brown rice, one cup of lentils, half a package of that frozen "Seasoning Blend" that is sold at Dollar Tree or Walmart (chopped onion, celery, bell peppers and parsley) and half a package of frozen "Santa Fe" style corn mix, also sold at Dollar Tree (corn, black beans, bell pepper and onion). I add 1-3/4 cups of liquid, with about half of that being pineapple soda (it really could be any fruit soda; I just happened to be given several bottles and was trying to come up with ways to use it since I'm not a sugary soda drinker!). Anyway, OMG is that a great combination that is so versatile, lasts well in the fridge and also freezes beautifully. Also, my pantry is now filled with numerous kinds of grains, beans, pickled veggies of various kinds and many tasty sauces and condiments that I've found in clearance sections that I guess seemed too unusual to appeal to other shoppers. I loved your inspiration to use peach salsa as the thread among all the dishes you made in this video. I don't think I would have thought of that. And if the cucumbers are still around, maybe infuse a couple gallons of water with them. So refreshing!

First time I made a tomato pasta in there but when I did the release half the sauce starting coming out of the valve! What a mess. I am not a vegan - I do eat chicken but I’m with you on the animals etc. I can’t really eat beans because I have IBS! And cauliflower and broccoli 😏 don’t agree with me either.

I recently got food poisoning (not from my vegan diet, but I had eaten some forbidden cream cheese) and WOW, that's when I discovered that my high roughage diet had backed up into my system. 😄 Anyhoo, I don't use the Instapot brand, but I do use an identical knock-off pot that I bought from QVC. Mine is only 2 quarts, tho, because Instapot's standard 6 quart size is much too big for my needs. I put my recipe on the rice setting for about 6 minutes. What I learned about pressure cooking that might help with your situation in that you have to leave about one quarter of the pot free for expansion during cooking or it will indeed overflow or just not cook properly at all. Hope this helps!
The zucchini dish you make is call Calabacitas in New Mexico. Our family has made this for generations. My Parents added ground beef to it to make it stretch and feed a family of 11. I made it for my family and now my Daughters make it for theirs.
For the leftover cucumbers........you could cut them up, and mix them with some cut up watermelon, to make a cucumber/watermelon salad. Or, you could cook some garbanzo beans, and add the cucumbers to a garbanzo bean salad, with some olives and red onion. And then make your own dressing for both.
Cucumber salad....thin slice the cucumbers, add salt, pepper, vinegar and a little maple syrup if you want to cut the vinegar flavor. Good with sliced onions too.
I liked your ideas, especially buddha bowl with rice. I might try your peach salsa recipe. A big bag like this of pecans would cost me over 20 euros, definitely not budget friendly in France so it's a very nice gift :)

Let me share you my win of the week: My parents are visiting so I need double the food we normally eat. My father is carnivore and eats meet at every meal. So, I prepared for their visit by buying in bulk and found meet on clearance. If fresh meat is soon to be passing it’s sell by date (considered for fresh meat), it will be reduced 50-70%. It is still good and can be even frozen further.

I love your cooking videos because I learn a lot. When I have excess cucumbers…I pickle them with sliced red onions in a sweet & sour vinegar. Delicious in salad, on rice, with grilled meats and on sandwiches
Slice a cucumber into rounds and use the slices straight away as "crackers". Top with a little bit of nut butter and perhaps another cucumber slice Cucumber sandwiches - fresh bread, butter or spread of choice, peeled and thinly sliced cucumbers. Optional extra the barest sprinkle of vinegar
If you find yourself with surplus of cucumber, make quick-salted garlic cucumbers of them. One fullsized cucumber shrinks so much that it makes a big serving for one person. 1 cucumber 4 tsp salt garlic cloves - sliced or crushed to taste 2 tablespoons oil (sunflower, rape seed, etc) Slice the cucumber thinly, possibly with a Scandinavian cheese slicer. Mix with the salt and leave for about 15 minutes or until the cucumber has softened. Rinse the cucumber well in cold water so that the salt level lowers, but does not disappear completely. Taste. Squeeze out excess water. Put the cucumber in a bowl with garlic and oil. Let stand at least 30 minutes in the fridge before serving.

I am a senior living alone and was given corn, zucchinis, yellow squash, peppers and Saturday given collard greens, cut up and froze for winter. Living only on social security I stretch anything. When I buy pork tenderloin, cut it up for several meals and freeze as well as cooking 2 days worth. Here in MD, we don't gave Kroger but have similar. I got 4 large ham steaks for &10.00 cut then in half which made 8 future meals. We all gave to do what Hope is mentioning
As a plant-based eater too, I always love these videos Hope and Larry! I can't imagine what I used to spend on meat, dairy and animal products. It is SO much more inexpensive to eat just plants!. I get those red bag deals also but for a double bonus. I eat the produce in the bag and clip the top label part off of the bag and use the "bag" part, scrunched up as a vegetable scrubber. Works great on carrots and potatoes.
Hello Hope! my idea for the cucumbers: slice them without the inner seed part in little cubes, season with everything bagel seasoning, Olive Oil, Apple Cider Vinegar, a little bit of Mustard and Honey - it can stay for at least 4-5 Days in the fridge and it is very good 😉 all the best and thanx for your videos!
If the cucumbers aren't bitter, there is always the fall back side of thinly sliced cucumbers in a sweet & vinegar dressing. Cucumbers cored make good snack sticks.
I always get something out of your videos. As I am not vegan, I would be using whole milk or half and half, and probably less of the flour, to assist with binding the fritters. This video is still helpful for me as I continue to add more plant-based foods to my diet. Thanks for sharing!

I think you should do a series on Kroger red bag meals. Peopke could get some really good ideas, especially coming into fall and winter. We don't have a Kroger where I live but, we do have a Ruler foods, which is a Kroger store and you can use the Kroger ap and coupons at that store. I think anyone could benefit from the information your sharing even without a Kroger.
I thought about that, too. I think I could add some vinegar and a little sweetener and make a it a quick pickled mixture to put on top of burgers and other sandwiches.
I've learned that fruits can be turned into preserves (jam), syrups (for tea or pancakes), sauces (salsa), marinades (pineapple to tenderize tough cuts of meat), and pastries (banana bread, apple pie). Just gotta be creative with it. Whatever needs a bit of a sweetener, consider using a fruit that's close to becoming wasted/trashed.
I know it's probably more than $10 if you do this - but I love to make dressings with a base of tahini, peanut butter, or tofu - can be ordinary tofu, or silken. It's not expensive but it adds natural protein and fat to your meal. Your recipe is also great - and I love homemade vinaigrettes for salad - but I very often make "buddha bowls" out of various leftovers chopped together, same as this but less fresh lol - and the dressing really ties it all together. I love that you can make a tasty, even spicy dressing that adds protein and nutrition rather than the relatively empty calorie commercial salad dressings - especially in the amounts I use.
I slice up cucumbers, add onions, and make a mayo, vinegar, sugar dressing. Let them sit until they marinade, and vola! I also have just sliced them with salt and pepper on top.
All looks great! I’m a meat lover, so is my husband could not do this but, we cut down in the amount of meat per serving and add more veggies. Those peaches would have been a cobbler at my house 😊

In NM we make calavasitas zucchini, corn, onions, and some green chili Alfried up together and then if you do cheese, you can put cheese on top also. It’s really good
Swedish Cucumber Salad. Thinly slice and salt the cakes - set them aside to drain, Meanwhile, mix sour cream with generous amounts of dill (dried or fresh), thinly shredded onion, salt, and pepper. Toss the cakes into the dressing. It is excellent garnished with toasted seeds. It's a great cooling side dish for summer.

For the extra cucumbers, I'd make them in to a cucumber salad; using everything you already have. Sliced cucumbers, diced tomato, julienne onions topped with an oil and vinegar dressing. Voila!!
Cucumbers, tomatoes, & onions marinated with salt, pepper vinegar and water for a few hours. Put them on top of lentils with a little shredded cheese of your choice. We like blue cheese crumbles on ours. Great salad that is yummy and healthy 😊

If you slice up the scallions and freeze them loose in a gallon bag they last for months. Same with pre chopped onions

As a plant-based eater too, I always love these videos Hope and Larry! I can't imagine what I used to spend on meat, dairy and animal products. It is SO much more inexpensive to eat just plants!. I get those red bag deals also but for a double bonus. I eat the produce in the bag and clip the top label part off of the bag and use the "bag" part, scrunched up as a vegetable scrubber. Works great on carrots and potatoes.

Slice the cucumber and put into a bowl with some rice vinegar and a pinch of sugar. If you have dill and onion- add that, too. It’s delicious

Hello Hope! my idea for the cucumbers: slice them without the inner seed part in little cubes, season with everything bagel seasoning, Olive Oil, Apple Cider Vinegar, a little bit of Mustard and Honey - it can stay for at least 4-5 Days in the fridge and it is very good 😉 all the best and thanx for your videos!
If the cucumbers aren't bitter, there is always the fall back side of thinly sliced cucumbers in a sweet & vinegar dressing.
Cucumbers cored make good snack sticks.
I always get something out of your videos. As I am not vegan, I would be using whole milk or half and half, and probably less of the flour, to assist with binding the fritters. This video is still helpful for me as I continue to add more plant-based foods to my diet. Thanks for sharing!

I think you should do a series on Kroger red bag meals. Peopke could get some really good ideas, especially coming into fall and winter. We don't have a Kroger where I live but, we do have a Ruler foods, which is a Kroger store and you can use the Kroger ap and coupons at that store. I think anyone could benefit from the information your sharing even without a Kroger.
Slice the cucumbers up with onion and tomato. Put a little oil and vinegar or whatever else you want.
I thought about that, too. I think I could add some vinegar and a little sweetener and make a it a quick pickled mixture to put on top of burgers and other sandwiches.
Or gazpacho
Add a little crushed dried red pepper to your pickled mixture for a little zip!
I've learned that fruits can be turned into preserves (jam), syrups (for tea or pancakes), sauces (salsa), marinades (pineapple to tenderize tough cuts of meat), and pastries (banana bread, apple pie). Just gotta be creative with it. Whatever needs a bit of a sweetener, consider using a fruit that's close to becoming wasted/trashed.
I know it's probably more than $10 if you do this - but I love to make dressings with a base of tahini, peanut butter, or tofu - can be ordinary tofu, or silken. It's not expensive but it adds natural protein and fat to your meal. Your recipe is also great - and I love homemade vinaigrettes for salad - but I very often make "buddha bowls" out of various leftovers chopped together, same as this but less fresh lol - and the dressing really ties it all together. I love that you can make a tasty, even spicy dressing that adds protein and nutrition rather than the relatively empty calorie commercial salad dressings - especially in the amounts I use.
I slice up cucumbers, add onions, and make a mayo, vinegar, sugar dressing. Let them sit until they marinade, and vola! I also have just sliced them with salt and pepper on top.

I just love this video! I love all your videos, but I was in desperate need of inspiration for my plant-based menu planning. The use of nuts... brilliant! Also, thank you for the dressing recipe! Looking forward to trying it. I make a cashew based ranch for my daughter and I normally go with a tahini based dressing. Tonight I made a wild rice and mushroom soup because those are the ingredients we had on hand. So good! Thanks again for all the amazing money saving inspiration! ❤

In NM we make calavasitas zucchini, corn, onions, and some green chili Alfried up together and then if you do cheese, you can put cheese on top also. It’s really good

for the cucumbers slice, soak in salt and vinegar, dehydrate and have savory chips. don't need to soak long just like 5 10 mins.

Swedish Cucumber Salad. Thinly slice and salt the cakes - set them aside to drain, Meanwhile, mix sour cream with generous amounts of dill (dried or fresh), thinly shredded onion, salt, and pepper. Toss the cakes into the dressing. It is excellent garnished with toasted seeds. It's a great cooling side dish for summer.

Cucumber is actually a member of the melon family, and is therefore a fruit.
For the extra cucumbers, I'd make them in to a cucumber salad; using everything you already have. Sliced cucumbers, diced tomato, julienne onions topped with an oil and vinegar dressing. Voila!!

Make a cucumber salad add some tomatoes add some corn add maybe some of the Peach sala then pour over some of your homemade salad dressing 😊
Cucumbers, tomatoes, & onions marinated with salt, pepper vinegar and water for a few hours. Put them on top of lentils with a little shredded cheese of your choice. We like blue cheese crumbles on ours. Great salad that is yummy and healthy 😊
