Braised Ham in Onion Gravy Recipe | Polish Cooking and Baking

Braised Ham in Onion Gravy Recipe:
approx. 1 kg of raw ham,
3-4 cups of water or stock,
small piece of leek,
2 carrots,
1-2 cloves of garlic,
1/3 cup of heavy cream or milk, optional,
1-2 tsp of potato starch or corn starch,
1 bay leaf,
few kernels of allspice,
seasonings to taste: salt, pepper, sweet paprika, dry herbs of choice
some parsley, optional
Cut your meat into bite size pieces. Sprinkle with seasonings. Heat a small amount of oil in a pan, add the meat and sear, until golden on both sides. To the same pan, add chopped leek and big pieces of carrots. Cook, for few minutes. Add finely chopped garlic. Cover with liquid, add bay leaves and allspice. Simmer on low, for about 1 h and 30 minutes or until very tender (cook for longer, if needed). Add cream. Season to taste. Thicken the sauce with some slurry (starch with water or cream). Serve over mashed potatoes, rice or barley and some crunchy slaw on the side. Enjoy!
