I just made this and I'm here to tell you the result. He is mostly right about needing no more salt. A decent teaspoon of salt per 3 cups of flour (tablespoon if six for 18-20 pieces of chicken) gets you where you need to be. 140 or over degrees Fahrenheit for internal temp in roughly 300 degrees oil will finish your chicken as long as you let it rest and allow residual heat to complete the cook. Everything else in this video is spot fucking on. That flour spice mix? You need it. You will get a HINT of the pickle brine taste but it will NOT overpower you tastewise. The crust will give you a fragrance of mostly the fennel seed and mace, and the poultry seasoning, salt, and pepper will give you a savory profile. Paprika and cayenne (use only one, MAYBE two tablespoons of cayenne) will achieve the smoky, spicy flavor you want without it being overbearing. The flavors in this chicken WILL be balanced. Nothing too overpowering and at LEAST as good as any KFC bucket you ever ate. This recipe makes a perfect crust without breadcrumbs. I'd say this is better than breadcrumbs. All you need to finish up is what Matty said about sprinkling a little salt on the chicken as it comes out. His recipe is real. As a home cook, I'm here to tell you he knows what he's talking about.
