Just made them and they are delicious. I had a few jars of honey left from last last years harvest and needed to make room for the next harvest. Used raw cane sugar instead of refined sugar, which gave the cookies even more flavor.

No. You will not get a perfect imprint. You can dust it with flour instead of using oil.
Please someone tell me how thick to roll out the dough for cutting the circles?
Hello 👋, if you are not using the molds, roll the dough out to 1/4" inches thick, which is about 7 millimeters. I hope that was helpful. Good luck 🌹
