Chic Fil A Chicken Sandwich Recipe - That They Don't Want You to Know!!!

  • Hey everyone! I am starting a Chic Fil A series where I show you how to get as close as possible to Chic Fil A. The difference between my videos and the rest on youtube, is that I match the ingredients listed on Chic Fil A's website. This is the inside scoop on how to get the CLOSEST sandwich possible to Chic Fil A. There was many months of trial and error perfecting the ratios of ingredients to get this one right.

    Recipe:
    Thin Sliced Chicken Breasts
    Brine:
    2-4 cups of cold water
    2 tablespoons of table salt
    Seasoning:
    1 Teaspoon Table Salt
    1-3 Teaspoons of MSG (Monosodium Glutamate)
    2 Teaspoons of Paprika
    2 Teaspoons of Black Pepper
    1/2 Teaspoon Cayenne Pepper
    1 Teaspoon Powder Sugar
    Egg Wash:
    2 Large Eggs
    1 Cup Nonfat Milk
    Breading:
    1.5 Cups of Self Rising Flour
    2 Tablespoons of Nonfat Powdered Milk
    1 Teaspoon of Powdered Sugar
    1 Tablespoon of Seasoning from Above.
    Fryer Oil:
    100% Fully Refined Peanut Oil
    Temperature: 335-340 degree Fahrenheit
    Buns:
    I used Brioche, but plain buns will work.
    Toast in 1/2 Tablespoon of butter per entire bun
    Pickles:
    Any type of thin Sliced Pickle Chip

    We tried this recipe today and we all couldn’t believe how amazing it tasted. I felt like we were eating at Chick-Fil-A. People on here saying they changed the recipe a little PLEASE DON’T! This guy knows what he’s talking about and he did his homework. Follow this recipe exact and it will taste amazing! I repeat DO NOT add pickle juice to the recipe unless you’re wanting it to not taste like Chick-Fil-A. The pickles on the sandwich give it the pickle flavor you guys are thinking it needs.

      The chicken breast is marinated in pickle brine (or juice), you can taste in the chicken with no actual pickles in the bread, and also in the seasoning - mustard seeds(powder) as one user also mentioned.

      @@DJRod-e4f Exactly; every time I have made a copycat recipe and I don't marinate in pickle juice it does not taste like Chic fila at all. I'm not sure how people are saying it taste the same.

    In an earlier post I mentioned I made this by your recipe and did a blind "triangle" test with my son.
    This weekend I took your recipe and modified it some.
    (Anyone gullible enough to believe the CEO is truthful on paprika only, bless your heart)
    I reduced the sugar by 1/3 in the brine, and used 1/2 milk 1/2 water. Before the egg wash, in a shaker, I made a mix of 1 tsp Ground Thyme, 1 tsp Ground Rosemary, and 1 tsp oregano. I sprinkled the dry chicken with the above mix. Then, with what was left over, I put it, and the same ingredients as your recipe in the breading, then followed the same steps as your guide.
    I made some for my son's birthday (on Sunday) as appetizers. Everyone said they were way closer than your original recipe we 1st tried .**Not 💯 unmistakable from Chick-fil-A but really close.
    I'm still working on tweaks now and then.

    I made this a couple days ago. The only change i made was to marinade in plain pickle juice instead of the marinade he uses and it was the bomb. We have a a chick-fil-a 10 minutes from me and i've never thought it was THAT great like people act like its the best thing since sliced bread. (good for fast food but thats about it). This was SOOO much better. I'm in love. I will continue to make this & thanks for posting it. I would definitely recommend the change i made (pickle juice brine).

    Has anyone else made this recipe? Because every youtubber says it tastes just or very close to Chick fila--who is right and who is wrong?
    but I made chipotle chicken from cooking with Chris and it was really good, but I never had the chicken from the restaurant.

    This recipe helped me make the best fried chicken sandwich! And I attempted many recipes that didn't quite hit the mark. The only difference I did was marinade it overnight and include some of the spices. From my own preference, I prefer saltwater brines. The chicken is a lot more juicer when compared to other marinades. I know the rumor is the company uses pickle juice in their marinade but all I get is pickle flavored chicken. Not my preference. This recipe is the best way to go!

    I always suspected they brined their chicken in pickle juice so I tried it and it was actually surprisingly good, but not quite that Chick-Fil-A flavor I was hoping for. I will definitely try your recipe now!

      Hell yeah! Honestly I think the secret is MSG and the breading flour they use. I have a specific type of flour that I found that is self rising.

      mkryu yes, if you brine it in pickle juice first for hours, it will taste much closer to their actual recipe. If not, you will not even be close. Been making it w/ pickle juice for years.

      Just tried these and they are mediocre at best. They put it in a foil kind of wrapper that makes the bun soggy and the chicken breast tastes like every other chicken breast. Nothing special. Good luck.

    Tried it as he prescribed and then with pickle juice. The pickle juice brine resulted in the sandwich tasting like pickle juice. The recipe in the video is better and pretty dang close to Chick-fil-A.

    [Like I said below to Mickey, but I"ll put the comment here where more people can see it.]
    Thank you, Chris and Mickey (or other employees like him that give us ideas on how to do our recipes better). You are doing the Lord's Work. Please, keep it up and sharing these "techniques" with us. Now, I don't mind eating out now -- say every once in a while, but it's just gotten too expensive for a family now.
    We're just trying to keep paying everything on time, because food costs are just too much. We don't eat out much now and are trying to copycat things that we want to eat at home. I don't want to go to Subway and pay a DAMNED TWELVE BUCKS for their stupid sandwich. My family only goes when they have BOGO. And, we're trying different subway breads to make them at home. Similarly, we like Jersey Mike's but we can't pay $ 18 bucks for their Philly Cheese steak that is 16 inch. So, we bought shaved beef from Walmart and are learning to make it at home for more like $2 or $3 bucks the same sandwich size. Just lot of Fast Food doesn't realize what families are going through. Everything has went up around Nov of 2022, and we're doing our best to keep treading water.

    I am stumped - the whole KFC and Chick Fil A is the Oil Pressure fryer and spices in the dry mix. I made KFC as a college kid. Here is an approximation of Chick's Ingredients
    1 Large Egg
    ½ cup Milk
    ½ cup Dill Pickle Juice
    1 pound Chicken Tenderloins (or chicken breasts, cut into 1 inch chunks)
    1 ¼ cups All-Purpose Flour
    1 teaspoon Paprika
    1 tablespoon Black Pepper
    1 teaspoon Kosher Salt
    ¼ teaspoon Cayenne Pepper
    ½ teaspoon MSG (optional but recommended)
    2 teaspoons Confectioners' Sugar
    1 teaspoon Baking Powder
    2 tablespoons Nonfat Milk Powder
    add Neutral Oil (for frying, like canola or peanut oil)

      Let me know if you have any questions! Having a fryer really helps control the temperature which is key to getting the breading right and not overcooking it or having it fall apart. Temperature control is everything

    You should have put the seasoning in the brine, not directly on the chicken. You also need a little more milk in your milk wash. Pressing the fillet is just to get the coating stuck well to the fillet, not necessarily to flatten out the fillet. When you remove the fillet from the flour you should set on a wire cooling rack. Nuggets get shaken off in a wire basket that looks like a cooling rack. You should only place 2 pickles. Not one, not three. Two.

    As a manager in training who has worked their for the last year...here's my thoughts:
    The filets look spot on in size and shape.
    The restaurant I work at has NEVER brined their chicken in salt...atleast while I was their. Maybe in the past. Maybe its at some or most resturants. Never seen this. And even if we did brine the chicken...where would we put it? Our nearby options are the walk in, where we cant have raw stuff otherwise cross contamination, and the freezers/refrigerators where we store the thawing chicken.
    Already w/ the spices...I think theirs too much paprika, or too much cayanne...or rather too much red. The regular filets should look golden brown or slightly dark brown if cooked too much. What the spices is...I'm not too sure. Our breading flour is premade at this point. Good job w/ the flour spot.
    the milk wash is honestly just POWDERED nonfat milk and egg, so IG close enough...Gotta say though, the color looks a little too yellow.
    NOOOOOOOO! What're ya doing!? The seasonings IN THE BREADING! If ya season the chicken and then bread it, it just makes either 1 a stronger unnecessary flavor, and/or 2 less flour for the cooking oil to cook the chicken. Also again, not sure if its before me or never done, I do not believe our regular Chick-FIl-A filets are preseasoned...we do premarinate our grilled chicken ie Spicy Grilled and normal Grilled Chicken, but besides those, we don't touch the chicken. And its not even seasoned completely...AND we dont even season THAT MUCH IF we do have them seasoned beforehand. Most of the time, the "preseasoned" chicken breast just looks like normal chicken breast.
    Dont know if I can congratulate you or insult ya for seasoning, dipping, then breading the chicken in preseasoned flour...
    The random clumps of milk wash IS NOT INTENTIONAL! We get it when we don't sift our station enough. Why must ya ruin the flour like us...
    Ya prob pressed the chicken a bit too much. Doing so may/could overcook the chicken, which sounds dumb, but its possible. But good job on not over coating the chicken in the flour.
    Ya caught your own mistake but I'll accept it as long as ya know. Our chicken is deep fried pressure cooked. Meaning we fry our chicken, and its pressure cooked. But maybe...just maybe that device works.
    We cant pat down our chicken. We let it chill on a wire rack like normal human beings.
    End result of the chicken looks more like Costco Chicken then CFA chicken...but at least theirs the lil crisp on the end.
    Buns aren't cooked w/ butter. They're cooked w/ canoli oil. But they look close enough as a mimicry.
    either .25 for effort, .5 for yes but no. .75 for close but no cigar. 1 for spot on. 0 for never seen or completely wrong

    Worst case scenario IF they did do what you had

    Percentage: 63.6%

    Honestly thought it would have been +70% based on the title...

      I would like to add a few things. From what I have seen in Chic Fil A restaurant tutorial videos, like the ones I posted above, there is no way for in store employees to tell how the chicken is brined because it comes in pre-seasoned and pre-brined in a bag. They even say it comes in pre seasoned, that is why I seasoned the chicken in the video. But if you watched further, you will see that I also season the flour.
      Other than that I really appreciate those tips. Again, you have more knowledge then I do, I only try my best to recreate the recipe. All in all, if I could afford it, and it made sense, I would pressure fry it. But those are only for commercial use and cannot be used here.

      Interesting enough, none of the hamburger buns at the store came close to chic fil a’s bun. So the closest thing I found was Walmarts brioche. If you find something closer please share!

    honestly it's better to do these recipes at home than to go out to a fast food restaurant, wasting about $20 for a meal that wont even fill you up. especially if you dont have a car to drive in.

    Hey Chris ... Why don't you have a video where you talk to us about the "Goals for your Channel". Then, ask us what we'd like for you to make. I'd love for you to become something like the next Everyman's Todd Wilbur. Or, let us guide you or suggest to you what to cook or crack, then the rest of us can cook at home more and not spend so damned much money. It's just gotten too expensive to eat out now. We are making so much at home now.

    This was my first real job when I was 16, we got to eat for free - I couldn't eat it for almost 10 years I ate so much. Their grilled chicken is marinated in pickle juice and spices - so weird. The chicken salad is fried chicken that didn't sell by a certain time ground up.

      Why not? Recent studies have debunked all the baseless fear mongering from the 60s and 70s. Unless you're one of the few people who have a sensitivity to it, there's nothing to worry about. Look it up for yourself if you don't believe me. It's not dangerous.

    I repeat, CHICK-FILA HAS RUINED PERFECTION by changing their crunchy breading seasoning ingredients on their chicken sandwiches since 1964.
    It is now bland. Their flavorful uniqueness that set them apart from all the rest is GONE in 2024.

    They use pickle juice as their brine, not what you did. They also don't don't cut their breast in half and flatten it. That's a fact. How'd you know if it tastes right if you don't have one near you?

    I am DEATHLY ALLERGIC to MSG and it will swell my throat up in under 20 minutes.

      So TRUE about MSG. I have been to hospital ER twice. MSG dangerous. Do not feed to children. When I go grocery shopping I feel like I am at the library as I study every food label for MSG.

    this is great if you are the mom of the house or have no life, not worth it to go through all that prep for one or even two people. What they charge is reasonable considering the price of the ingredients

    I tried their chicken sandwich and the bun was kind of soggy, the chicken breast was just meh and the chicken nugget things literally tasted like rubber...why do people go crazy for it? I think we Americans have gotten used to mediocre. Or maybe I'm just getting old, I won't rule that out.
