Nice. We call it fruit cake in Jamaica. No peanuts though. And definitely more spices are added. If we do use nuts, its cashew, and that is used once in a blue moon.
I know. This recipe is certainly NOT the authentic one. Too many ingredients missing and certainly no peanuts. My Gran use to add a tablespoon of peanut butter sometimes when making a pound of cake which use to yield three pans. The recipe use to be a pound each of raisins, prunes, currents, margarine, flour, sugar, 12 eggs , quarter pound of mix peel and cherries (washed and cut up) cake spice or grated orange peel, nutmeg and a pinch of cinnamon and essence (vanilla/almond) and of course burnt sugar/ caramel. Still make it this way.

No you don't have to, the rum you add when it is done baking, will help it to last for long enough. Tbh a black cake can last up to a year, providing you keep it in an air tight container in the fridge, without adding more rum. I am feeling drunk with all that rum already🤭🤭

I actually made 3 today for my classes on Thursday we're doing a wedding cake ... miss asked for it to be kept in the pan, can I place foil rap at the top of the pan and place in the fridge until Thursday?
You can wrap first with some saran plastic wrap first then the foil to keep it air tight? It should be ok. You can use the foil wrap alone too, if you don't have the plastic wrap
Yes you can keep it out of the fridge for a long time as well but not as long as if it is in the fridge as you know. We sometimes keep ours for weeks out of the fridge.

Thank you, this is half pound so if you want to make 1 pound you will need the following ingredients which ere doubled up. 2 cups all purpose flour 2 cups brown sugar 2 cups butter 1/2 cup finely chopped peanuts 8 eggs 2 tsp essence approx. 142 ml browning caramel . 3 cups dried rum soaked fruits ( raisins+prunes )can also add maraschino cherries and dried citrus peel the raisins and prunes can be soaked in rum or fruit juice ( cherry is popular) for 1 week to a year.

For Back Cake baking powder is not used , it is supposed to be solid and compact unlike a Sponge cake..
