Because it's the NFL and it's hard. No matter what a team's record is in the NFL, it isn't college football where there are huge talent disparities and the perceived better team always wins. Every NFL team is loaded with talented players and coaches; sometimes it's a style matchup thing too. Often very little separates 4-12 and 12-4 teams.

Remember back in 2005, Champ's prime, when opposing QB's were afraid to even throw to his side of the field? And then when he returned that INT 100 yards in that 2005 Divisional playoff game against the f'ing pats I can honestly say I finally ordered a #24 jersey the very next day, which has sadly been collecting dust in my closet for way too long now. Damn we should've won Super Bowl 48 just so Champ could have a ring, smh. Fast forward to 2010 when my future favorite defensive Denver Bronco is drafted, Mr Super Bowl 50 MVP Von Miller. Who instantly started climbing the ladder for not only my favorite current defensive Denver Bronco but my favorite Denver Bronco of all-time. During that 2015 season he would take his place in my top 5 all-time, leapfrogging TD at #2 to be #1b only behind Elway after that Super Bowl 50 performance he put on. But my point is I'm truly gonna cry if it ever gets to the point that we're having to watch #58 succumb to father time and be a shadow of his former greatness like I had to watch Champ do. To all the morons who keep asking, "How did that Denver team 'struggle' with Jacksonville?": Short of two brief blips at half and in the 3rd, Denver was comfortably ahead for most of the game, for one. It's the NFL, for two. While it's often used in a cliche fashion to say, "Any Given Sunday", it rings true. Jacksonville - like any NFL team - is loaded with talented players and coaches. Sometimes it's the small things that separates 13-3 teams from the 3-13 ones. That's why new teams make the playoffs every year despite the same personnel as the year before, and some teams miss despite making it the year before. Jacksonville didn't want to get embarrassed out there and thus they played their guts out. They had talent. Denver also made a lot of mistakes with penalties, receiver drops and falling down, and even fumbles that were unforced. This isn't college football, where there are massive talent disparities between the big programs and mid-major programs. There are no mid-major programs in the NFL. The fact Denver did what they did that year was absurd and may never be seen again, but the fans had been so spoiled that they expected, unrealistically, to win every game by 30+ points. It's actually more perplexing to me that Denver faced a number of teams with the same talent level and defensive scheme as Seattle, but went into the Super Bowl and got clobbered. (SIDE NOTE: I have it on 100% good authority that the game was thrown anyway, as have been most modern championships, but that's a discussion too long for a UA-cam post.) Consider Kansas City - they were 9-0 when Denver first encountered them, and still tied for first when they met the second time. Kansas City, not Seattle, had the #1 overall defense at the time, and arguably had more talent. Dantari Poe and Justin Huston were their d-linemen and got way more pressure than Seattle's line, Derrick Johnson and Tamba Hali led a good LB core against the run, in blitzes, and in coverage, and they had Brandon Flowers, Sean Smith, and an absolute stud in Eric Berry in the DB spots. Also, they played tight man-to-man, pressing and getting physical with the receivers at the line, just like Seattle. Furthermore, they had a good offense of their own to complement. Both games started with KC getting stops and forcing turnovers, but Denver overcame it by taking what was giving to them, dinking, dunking, and running, and by sheer volume of plays, tired out the defense. Then plays started opening up in the middle of the field and we saw that as Decker was able to torch them. Yet they completely abandoned that plan against Seattle and just ran bubble screens until they got ran over? That made no sense, and as I noted in parenthesis before, there is a WWE-style scripted reason for it...
They could've called a personal foul on Denver as well around 23:00, but *shockingly* enough they didn't. There's also a lot of BS flags against Jacksonville.
