Shizuka and special guest Jesse explore the charming city of Matsumoto in Nagano prefecture. Famous for its original castle, Matsumoto is also well known for its production of miso, the fermented soybean paste. After enjoying some local mochi treats, they head to the Ishii Miso Factory.
Shizuka and Jesse observe the step-by-step process of how miso is made. This staple of Japanese cuisine is essential for many types of Japanese food, especially for the preparation of miso soup. Of course, this experience would not be complete without a tasting, and Shizuka and Jesse enjoy a miso focused feast.

Im stopping my Matsumoto and will definitely go to the warehouse for a tasting. Would be great if I could find the cafe as well, searching for miso cafe toan didn't yield any results for me. Thanks for this hidden gem!

I tried a miso soup the other day and noticed a distinct flavor that reminded me of beer. I'm not sure if this is a common flavor profile for miso soup or if it was just my taste buds playing tricks on me...any thoughts? Interesting video... MI SO like it! 😉😉😄😄
I'm visiting Nagano next week! and was planning to visit Ishii Miso factory, how much time would you recommend spending here? I am also planning to visit Daio Wasabi farm as well.
