    -Salt 1.25tsp (6g)
    -Gelatin 1.5tsp (6g)
    -Kombu Dashi 3tbsp (45ml)
    -Black pepper some

    -Onion 1/2 (90-100g)
    -Apple 1 (140-150g)
    -Garlic (as peeled) 10g

    Sooo I made this recipe today! I didn’t have gelatin, so I won’t comment on the burger. But the sauce turned ou unexpectedly (cuz my skills suck) great! It resembled the taste of bulgogi (Korean bbq) sauce, which I absolutely love, so I was quite happy with the result. My family also loved it, I’m so happy!!!
    I didn’t have an apple, so I used Japanese pear instead. If you don’t have either of these fruits, the sauce taste will be too strong, so don’t skip adding the fruit.
    I was so sad that I didn’t have gelatin, cuz my hamburgers always turn out kinda dry 🥲
    Additional comment: Thank you for all the amazing tips and recipes chef!!! I hope your channel gets the recognition it deserves

    Thank you as always Taku-san! This is one of Japanese food I really want to try but until now can't find any restaurant with delicious hamburg, I have tried making from scratch but it's so dry and didn't come out great QxQ

    This looks amazing, I think when I make meatballs I’ll use your technique to get them juicier. Is your sauce the standard sauce with Hamburg, I always thought it was a gravy. Thanks for sharing!

    作ってみました。ソースが9割がた出来た時点では玉葱の味が鋭く「自分の舌には合わないかも…」と思ったのですが、ハンバーグを焼いた時に出た脂及び肉汁と混合させたら角が取れ、驚く程に美味しくなり箸が止まりませんでした。素晴らしいレシピをありがとうございます。

    肉汁たっぷり美味しそうです。
    ゼラチンと出汁を混ぜあせたあと、お肉に入れるまで冷蔵庫に入れて冷やしておいた方がいいでしょうか?

      ある程度冷めるまでは冷蔵庫か常温にしておいた方がいいですね!
      でも固まってしまうと肉と混ざらなくなってしまうので、急ぐ場合はボウルごと氷水に当てて、混ぜながら冷ますといいと思います!!😉👍

      You can, but the panko and onion will absorb the juiciness.
      So it will taste probably ok, but won't be as juicy as this recipe😉👍

      Yes exactly the same TS!!
      But just do not overcrowd your pan.
      It needs a gap in between for the caramelisation 😉👍

      Basically thesame thing soonmeng!!
      (Might need to cook 0.5-1mins longer or shorter depending on your stove but)
      Just do not overcrowd your pan!
      It doesn't caramelise nicely😉

      @@CHEFSLABO I tried today, cooked 6-patties... 4 together then 1 x 2 individually... Individual taste better, my family said it's very oriental-taste... Ha ha ha, we usually do cheese-burgers... But will do better next attempt. Really enjoying your channel... But still way behind your skills... Cheers from Malaysia, enjoy your break

    We have here in Germany " Frikadellen" who are almost exactly like japanese Hamburg Steak ( although some differences are there naturally). But the Idea with Gelatine and even the Dashi is really a Nice Idea, i guess i will try that with my Mother some Time soon when we Make Frikadellen ^^

      I loved the Frikadelle when I went to Germany!!!! I miss it :')
      But yes! The gelatin mix is super interesting, should work for any patty ^^

      The Japanese Hamburg Steak is derived from the Frikadelle which the Germans introduced to Japan during Meji Period (1868-1912).

I would suggest a calmer or maybe lower the volume (if you want an upbeat music). The focus should be more on your cooking, and that your background music should enhance the quality of your videos.
