I wanted to not burn my food yesterday, but it didn't work. It looked like the fire nation had attacked.
I can't even imagine how blessed Alex must feel every time one of these culinary superheroes responds positively like this. lol
I mean, at this point Alex is starting to become a culinary superhero himself...
I feel blessed because Alex is teaching/showing us everything he discovers. Honestly what a world we live in! We have the very best of the best teaching us all their techniques and they are so humble, proud and willing to teach us eagerly. Thanks a lot Alex!
Enzo isn't one of those guys who hordes his knowledge. I wish more people were teachers like him.

yes, i have watched a few of his videos and he always comes of as a fun guy with a big heart and a lot of integrity.
If you saw the original ending you would’ve seen Enzos face go from a happy guy to a guy that’s fed up with this. The thumbnail still shows the original 1:23 length but when you go to the video it’s only 1:22. Alex cut that part out

Adamos Hadjivasiliou it’s not a conspiracy. A few people like myself saw this video a short time after Alex posted it. The original ending at 1:23 shows Enzos face go from happy like it’s currently cut, to his face showing disgust and walking away. Several people commented about it and they were deleted. There are even still comments noting the deletions and original ending.

recoil53 it’s more like the American TV shows edited his shows to make it “entertaining.” The British shows are much calmer.

@@recoil53 I mean, to be fair, ramsay only gets that way when people who claim themselves to be professional chefs cannot keep up with professional standards. A kitchen's hectic and failure cannot be tolerated. In every show outside of hell's kitchen he's pretty calm and reasonable.

Salut Alex,
you need to look at the cooker You use for your pizza it is ok but it’s not authentic until you start cooking it in a wood fired oven. Having spent lockdown learning the art of making a wood fired oven there is a whole series on how to do this right. The perfect ratio of dome to door, the proportion of chimney to opening to avoid blow back, and I think there is yet to be created the perfect homebrew cement mixture for creating the dome for a wood fired oven. Many make a Pompeii oven but there is a whole underground movement making their own cement, fire clay, lime and sand mixtures to perfect an oven. I’ve been researching this since making a flawed oven and have come up with some interesting flaws in the current recommended best method. This is crying out for a passionate man with the desire to perfect the best oven to cook pizza.

there is this really amazing cookbook called: the element of pizza- this guy is also in it. what is considered "true" neopolitan pizza is controlled by a list enforced by an organization in Naples. the book is really interesting because it covers pizza techniques from all over the world, and is an interesting rebuttal what is considered tradition.

It really cool how Italian are know for hating people ruining there food traditions and how much Alex has cared and respect every traditon and value to the point that a master pizzaiolo respect his attempt rather than bashing it to the ground.
I think there is a difference between those that say, "I'm trying to learn the traditional way." compared to "This is a traditional dish" vs "This is my take on a traditional dish."

Something that I will never understand though is why an Italian or any other people would go to Brussels, Geneva, NYC, or wherever asking them to recognize their amazing traditions. The commercial and branding aspect of it, I completely understand. Beyond that, it is still a mystery to me.
