This video is an underdog. It’s an easier introduction to cooking fish. I feel like if you redid it now you could help a lot more people get in to good fish. I tried this with trout and it was great. Not a heavy meal but super satisfying. I subbed the sauce with homemade onion gravy and mashed potatoes.
Great video. I used to work at a really nice seafood joint and after we cleaned and scaled our fish, we would brine the filets in a 10% brine (which is roughly the salinity of the ocean) and then dehydrate them skin side up uncovered on baking sheets in the walk in for several hours. I've still never found a method that both seasoned the fish and ensured the skin was as crispy as we had it there. The brine and then the dry air from the fridge really did a wonder on the fish. Other than that, we basically cooked them as you did here. Good stuff.

Just curious... the salt on the cutting board, is that acting as an abrasive, or seasoning, or both? Great information on fish, which I love. I'm totally down with this!
Great recipe! Easy, light, delightful and full of flavor. Upon returning home from the grocer with all my herbs, I headed to the garden to get my basil only to find that we must have had a light frost that destoyed it, sad. I typically can't stand compromising on ingredients but decided not to make another trip to the store and proceeded using dried basil, yuck, but whatever. I used keta salmon filets which have a thinner skin than farm raised salmon and it crisped up nicely. It was surprisingly good without the fresh basil, and I really look forward to making it again with the full entourage of appropriate ingredients. Love your recipes!!!!!@
I love some good fish. I think it is one of the fastest, easiest proteins to make, super tasty, and tends to be pretty healthy. I generally cook on a buget though and fish is definitely not something I want to go cheap on.
