I did this once with purple bell pepper and yellow. it was so colourful and fun! and delicious!

OK!! This salad is SCRUMPTOUS!! I definitely DIG that you added cucumbers. LOVE them! And thanks for the tip on removing the seeds. Never, thought to do that, but will now. I personally, would not cut my veggies so big, only because then it's hard to have more than one veggie/bread in a bite, maybe two. 😥And, for the perfect bite, I want to try and get as any of the veggies as I can in every bite. 😋 Thanks loads for sharing. So pretty!! I like to use some red, yellow and green bell peppers in my panzanella and even though it's not true to the original I love marinated artichoke hearts in it too.

Nope! It's stale bread! I think fresh bread is just too soft for this, because you're aiming to get almost crouton-like bread pieces :)

The cucumber peel is the sweetest thing!!!! IF you buy Organic, of course!
If you keep making the mistake of buying pesticide-ridden fruits and vegetables, then I'm deeply sorry for you, you're missing on TONS of flavors and nutrients!
Remember; most nutrients are in the peels!!! Don't encourage toxic pesticide usage with your money!
peel left on cucumber after she said she doesn't like it. Small amount of seeds from the pepper left in...which the pepper seeds are almost as bad to bite down as a piece of egg shell if you ask me.
