    I made the meatball/orzo dish and my family loved it. On your suggestion we omitted the Parmesan. Now I want to try it with chicken meatballs. Thank you.

    I’ve done the lemon orzo with salmon in the air fryer. I love it. I so want to try that no bread, stuffed peppers. Both my hubby & I would love it. We’re trying to eat less carbs. So great.

    the red wine vinegar in Tzatziki is quite interesting. I like to make mine with a cucumber, Greek yoghurt, salt, pepper, lots of garlic, a bit of lemon juice and then some dill and a little pinch of sugar.

    I have been thoroughly been enjoying myself binge watching your slow cooker/crock pot recipes! I'm kind of sick right now and not hungry at all so it's the perfect time for me to watch. First, there are these luscious & delicious sounding (and looking) recipes which would normally be tempting me, making me hungry. And I would find "something" to eat because I wouldn't be making a crock pot meal right then. Bad idea. Like going to the grocery store hungry. But now, since food is not appealing at all, my mind can tell me how good it is without my taste buds trying to be satisfied by something that isn't what I'm seeing.
    Second, I might get lucky and this binge watching could (?) stimulate my appetite. With several days of not eating that would be a good thing. If I eat something a bit lighter that the wonderful meals I've been looking at. And Third, I am saving a bunch of crock pot meals into categories. I'm sorting in recipes I already had saved too. Categories include "With CHICKEN", "With BEEF", "With PORK" ( you don't have many of those unless you count bacon. But to me Bacon is its own category (but not here) I have a "bacon - Bacon - BACON"file. I just won't find any of your recipes listed in "With HAM. Right? So many of your ground meat recipes are so versatile so I now have a
    "With Ground MEAT OF CHOICE" category. Also "Includes or is served with PASTA", " Crock Pot SOUPS", " COMFORT FOOD", etc. I've even got files for " Crock Pot DESSERTS" and "Crock Pot APPETIZERS" plus a few others. Should be easier to find the recipe I'm looking for now. And after this binge watching I have so many more to choose from.
    Thank you so much for sharing. I love the personalized comments and that you include some funny little "oopses" (some might call bloopers) like when the can lid goes flying or the bowl won't hold everything. Might there be more that you cut out when editing? Could you maybe put together a short segment of bloopers? We all have those moments in the kitchen often at the most inopportune moments. We either have to look at them and laugh or get totally frustrated and cry. I'd rather laugh. And, I do have to admit, when "oopses" happen to someone else they usually are funny & enjoyable to watch. We all need to laugh more. Got any good ones to share?
    I also love how you make adaptations on the fly. Don't have enough of this ingredient - use however much you do have or swap it with something else or just leave it out. And I love that you love FLAVOR and are not shy about using your spices. Me too. Nothing worse than trying a new recipe you've been looking forward to and then it turns out to be "blah", bland, just "so so" and really disappointing. I improvise too. You want meat to be succulent and rich. Even hamburger. It has a reason for being there. Let it shine. No ingredient should just be a "filler". Add some seasoning, a bit of butter, some wistershire sauce or something unexpected (but will go with the other ingredients as well). I like that you treat your ingredients individually and combined with this in mind. There are a lot of good cooks on UA-cam but I especially like your presentations. Please keep them coming.
    Now I have an oops. I started this comment with a real comment in mind. Now I've forgotten what it was. Oops! Maybe it will come back to me.

    Those Philly Cheesesteak Stuffed Peppers!!!     Amber I made the Philly cheese steak stuffed pepper casserole last night and it was so delicious; I made two different batches because my husband is staying away from white rice at the moment,, I made his with cauliflower rice and it was no different. All the flavors were amazing.

    Just a tip when you need a lid for a pan that doesn't have one. I use a pizza pan and just set it on top of the pan.

    Made the lemon orzo meatballs tonight. My orzo was lemony but I used fresh squeezed Italian lemons so perhaps the jar juice weakens to much while cooking that long. Also used very little butter like you suggested.

    Great recipes!! That spinach parm orzo is one of my favorites!! I know you are a pretty healthy cook!! A very good cook also. I have a tip…that jarred minced garlic to me is awful. Fresh as you know is way better. Heres is what i do because I refuse to use the jarred stuff. I buy a bag of peeled garlic, mince it in a food processor. I fill jars with a lid, with 1/4 olive oil then fill with garlic making sure the garlic is all submerged under the oil. Place ldt tightly and store in the refrigerator for several week. It is so much better.

    I'm not a huge fan of too much lemon, so I think now that you say the Parmesan cheese takes away from the lemon I might just have to try it, bc I do love a good meatball and orzo.

    Amber watching you make the Philly cheesesteak peppers reminded me of the video of your stuffed pepper casserole. Do you think this could bbe recreated into that? Maybe with ground beef, mushrooms, prov cheese, but the peppers diced on the bottom of the casserole dish.

    The orzo like delicious. I'd use ground chicken for the meatballs, I think.
    BTW, crackpot temp settings don't actually work like that. High means it comes up to temp faster, but starting on high and then going to low doesn't actually make any difference to how it cooks of how long it takes because it's fully at temp.

    This sounds disgusting, but if you add a little mayo, like a heaping teaspoon. To ground beef it will add moisture and flavor.
