    3 or 4 Carolina Reapers
    1/3 cup of White Vinegar
    2 cans Mangoes or Peaches
    1 teaspoon Salt
    3 cloves Garlic
    3 tablespoons Sugar
    Blend, simmer, reduce, enjoy...
    Feel free to adjust the recipe to suit your taste or heat tolerance

    I made this! However, I made the following amendments:
    8 Carolina reapers
    300ml of white vinegar
    2 cans of peaches (without the juice)
    1 teaspoon sea salt
    3 cloves of garlic
    3 tablespoons of brown sugar
    I blended until smooth and then cooked for 30 minutes to thicken to my requirements.
    It is amazing, thanks for the pointers!

      Nice! And I think the mango sauce was the better of the two ---both were good, but the mangoes made for a little thicker sauce. I suggest trying one part mango, one part pineapple ;)

    PRETTY AWESOME. I REMEMBER AT A RED LOBSTER WE HAD SOME HOT PEPPERS & NO ONE COULD BELIEVE I JUST TOOK THEM & ATE THEM. NOT GHOST PEPPERS THOUGH ! THE MEXICAN PLACE I GO TO HAS MANGO & PINEAPPLE SALSA WITH TOMATOES, ONIONS & SOMETHING ELSE. I LIKE IT. THX FOR THE VIDEO.

      Last time I made a hot sauce I mixed in some pineapples ---it was really good! I didn't imagine Red Lobster would have anything spicy, but then again, I never eat there, so...

    That really is easy to make. Sounds good but don’t think I could handle ghost peppers. I like that you repurposed your bottles. Perfect!

    Hi Paul Hope your are having a fantastic week.When you start growing the Habanero and Carolina Reaper Chilies in the garden.Use the black plastic trick on top of the Soil. If you need info about this There are videos about this trick. On U-tube.This does really work. Kn

    I do hot but not Carolina Reaper hot. That slow burn really gets you in the end, eh.🔥 Thanks for sharing another fantastic recipe and will give it a try to see how my hubby fares. El Fuego strikes again.🔥🤪🌡️🌶️

      Well, the reapers are diluted so they were hot, but not intolerable. And of course you can adjust the ratios pretty easily or swap out the peppers for something else. I made a habanero sauce with pineapple last time that was really good!

    Looks very tasty and very easy to make too I see. I think I will try to make this but maybe not with reaper maybe with scotch bonnet instead, I always have it in mind that if it really burns going in then it must no be too pleasant the other way.

      For sure. You can switch out the pepper or even the fruits too. I made a habanero one before that was half mango and half pineapple, and it was amazing!

      Many "steak" sauces are made using raisins, some "pub" sauces are made using apples. My mother used to make a sauce for chicken that had lemon juice and honey. Experimentation can be a great deal of fun.

      Nice! You should definitely make some sauce or something from them. just use one or two and it won't be as spicy. The ones I used were probably frozen too ---at least they seemed that way and I did get them in the spring so it's not like they were just harvested or anything. Still worked, but not sure the seeds will grow...

    Hahaha I literally lol’d when you first taste tested it! After watching a couple videos of yours eating hot sauce and seeing how you handled the Reaper I’d say you can certainly handle your spice! Id have been sweating so bad!

      These had quite the kick, for sure. Even diluted they are quite strong. But after I cut the peppers I gave the fingertip of my glove a lick just to see how strong they really were... big mistake! But glad I wore gloves!

      Well, I made a similar recipe before that lasted in the fridge for a year. I noticed I used a little more vinegar that time, but I think it should have a pretty decent shelf life. As long as it's refrigerated I haven't had an issue in the past. You could just make a smaller batch if you are worried it might take a while to get through. The peppers I used weren't fresh to begin with, I suspect they had been frozen. So if you have a large batch of peppers, you could just use a few and freeze the rest until you need to make more sauce. Then you could experiment and try different fruits etc, too. My favourite I made last time was pineapple/mango. And I have already had some of the seeds start to sprout! So I am pretty excited! ;)

      @@CriticalEatsJapan thanks paul, that freezing the peppers is a good idea, and making smaller portions,like 200ml bottles sounds reasonable, pineapple sounds also great,..with bbq chickenbreast..,nice idea. about the sprouts,well you made once or twice? a small video about your garden (the boxes,with the worms or so,that you placed elsewhere),you can also make one with those, i dont mean a permacam ,but kinda a 1min progress,at the end of each new vid. just a idea,might be too much work in the end,but its fun for flatowners who arnt allowed to make their own.thanks for your time.

    I also would not worry about cross contamination . I would be concerned about possible 3rd degree burns : ) I like Carolina reapers. I grow my own Ghost peppers Here in Canada they are best inside in front of a window that gets the most sun.

    HI CRITICAL I WAS JUST THINKING. MAYBE IF YOU ADDED A LITTLE CORN OR POTATO STARCH YOU COULD THICKEN IT UP WITH THAT. DON'T KNOW IF IT WOULD WORK OR NOT. JUST A THOUGHT. 😁😁😁😁

      Yes, those would probably work as thickeners, but actually I think the consistency was perfect after cooling them down

    The heat must have kicked in again at 6:35 lol. Baaatch...hic... I grew habaneros in my garden one year and processed them without gloves. My fingertips had a burning sensation for 2 days.

      Yikes! I wore gloves when I was cutting the peppers, but then switched to chopsticks. After I cut the peppers I thought it would be fun to lick the tip of one of the fingers to see how hot it really was ---bit mistake! ;)

      A few years ago I gave some habaneros to a friend of mine. Somehow he handled them before taking a shower... and really regretted it when certain parts started to burn ;)

    Sounds good but it would probably send me to hell just trying it. Do you think it would still be good if you substitute jalapenos for the reapers as they are the most I can handle?

      Yeah, for sure! I used the same recipe with habaneros before ---you can even substitute the fruits. I mixed in some pineapple and it was really good!

    The life span of the sauce? Is it ok to not put it in ref for storage? Or really need to put it in the fridge?

      It has plenty of vinegar in it so I didn't have a problem with it. I kept a bottle of it my desk at school for a month or two until I used it up. The excess was in my fridge at home though. I would suggest just making a smaller batch if you are concerned...

      I tried it today, just 1 can of peach but 4 fresh reaper... very satisfied 😆 Im a Filipino, we were born with hot tongue, indeed, the reaper is the one we need in the kitchen everyday 😆
