Mango and Scotch Bonnet Hot Sauce Recipe!

- Here is my first ever dabble in making videos for you to enjoy.
7-10 Scotch Bonnets
3-4 Long Red Chillis
2 red onions
2 Shallots (use an extra onion if, I just had these to use up)
One bulb of garlic
4 carrots
100ml water
850g mango pulp
350ml white vinegar
4 limes - juiced
Table spoon brown sugar
Table spook salt
Remove the head off of the chilis. Slice the onions and shallots into quarters, and leave the skins on for now. This will give them some protection in the pan when charring slightly. Smash the bulb of garlic to release all the cloves.
In a heavy bottom pan charr off all the prepared items until they are slightly blackened.
Slice the carrots in a big stockpot and a generous glug of oil. Add the carrots for a minute then peel the rest of the veg and whack them in the pan with a little water.
Simmer this gently for about 30 mins to soften.
Add the mango, lime, vinegar, sugar, and salt, and let blip away for about 20 mins.
Now blend your sauce and jar it up.

Sounds like a good afternoon project... nicely done.
I might add a bit of allspice and bay, maybe some pineapple, just for giggles.
BTW habanero, pineapple, roasted garlic and cilantro (coriander if you must) plus a serious pinch of yellow curry powder makes a great combination.
Wonderful for topping a bit of bbq'd bird.

Can you explain why you don’t take the skins of the onions?
Of course, basically to save a bit of time. The skins add a little more protection to the onions and such so the risk of them over caramelising whilst I mince about cutting carrots is much less. Also when they magically appear undressed for their oniony clobber at 2:55, there were much easier to remove the skins.

Made this sauce following recipe but the vinegar smell and taste was quite strong also the sauce wasnt as spicy as I expected. I used distilled vinegar so maybe that’s the mistake? And for sure my chillis must have been fakes or not a good batch, I put way more than 10. Still thanks for showing me how to make this, will try again in the future.
Tried this with just scotch bonnets with half the seeds removed. Very tasty and happy sauce! How long can this keep in a jar?
