Cage: The absolute bare minimum cage size for 1 male or 2 female mice kept as pets is 20 gallons, but a much better size is 40 gallon (long/breeder). Or floorspace of around 80cm by 50cm. This is because any smaller sizes are often too small to fit all the proper items. (I have a bin cage used as a temporary cage that is about 20 gallons, and I can tell you it doesn't hold everything required). My main cage is a DIY of 100cm by 50cm floorspace.
Bedding: Safe wood based bedding tend to be your best option. Paper can be used, but it has terrible ammonia and odor control, so mouse owners usually only use paper as an additional substrate or for sleeping areas. Please do not use fleece as the main bedding for your mice! You can give them hammocks, which is perfectly fine, but mice like to burrow. They need a bedding depth of at least 15cm deep, which fleece would not be able to provide.
Enrichment: No problems here. Enrichment is important. Just make sure your mouse cage is cluttered as mice are prey animals and like to be able to hide and feel safe. Minimum wheel size for mice is 8 inch / 20 cm, but 25cm or larger is often better, especially if your mice are on the larger side.
Diet and Health: Not going to comment on these as I am not a vet or dietary expert. Please do your own research on which good foods are available / recommended and which treats are safe. If your mouse shows any signs of feeling ill, you can ask for advice from mouse keepers, but take them to the vet rather than wait. Remember, mice are prey animals, so they hide their illnesses well. Often times, if it's something serious, by the time you see them acting unwell, it's already too late.
Ultimately, please please please do proper research before bringing any animal home, but especially small animals like mice, hamsters etc, which tend to be advertised towards kids.
    1) Mice are not cheap (the mice themselves can be, but they require a proper cage, vet care, and have recurring costs for food, bedding etc.).
    2) Mice are not necessarily easy (mice are very social animals. An exception is intact male mice as they are territorial and will fight other males to the death (neutered males can live together or with females, and is a great option since they are so social) or the very rare scenario where a female just does not get along with others (but this tends to RARELY happen.)
So are you willing to spend the money to neuter males? Are you ready and able to keep an extra temporary cage to quarantine new mice and to go through the introduction process to add the new mice to your existing group? Are you happy to keep multiple mice, considering they do best in groups of 3 or more?
There's a lot more I can get into, and I'm always happy to discuss mice and their care. Mice do make amazing little companions... for the right people! But I'll stop here or I'll be typing all day hehe.
