How to Brew a Belgian-Style Christmas Quad | Grain to Glass | Classic Styles

  • In this video, I show my experience brewing an awesome Belgian Quadrupel with added Christmas spices. This is tied with a Belgian Tripel as my favorite kind of beer, so it was daunting, but the beer turned out fantastic! Huge amounts of flavor and complexity all without being too much. My only criticisms were that it was a bit too thick-bodied and could use more spice, bu overall it was an awesome experience and definitely a beer I'll be brewing again. The final beer was 9.6% ABV and 28 IBUs. I hope you enjoy this video as much as I did the beer!

    Single Infusion mash at 153 for 90+ minutes
    60 minute boil:

    Yeast: 2 x packages of rehydrated SafBrew T-58 dry Belgian Ale Yeast - amzn.to/2JjWwWQ
    Ferment for three weeks starting at 68 then slowly raising to 72 degrees to encourage attenuation
    FG: 1.016

    Great vid as always! I had a notion to make one of my next brews a Belgian trippel / quad - should’ve known you’d be one of the first results when I took to UA-cam for reference material. Thanks again for the grain to glass commitment, waiting 2 months to complete the story requires the patience of a good brewer!

      Thank you for the kind words! I really enjoyed this one and its definitely an exciting style. I saved a few bottled so I'll have to do a one year tasting notes video sometime. I've got a tripel video I'm trying to push out sometime this week as well.

    Great vid man! Inspired me to go out of my comfort zone and try making a Belgian Quad myself (despite feeling vastly out of my league). Your content is great and super relatable (as a fellow New Englander brewing in his apartment). Cheers!

    Brewing a quad in the upcoming weeks for Christmas as well. Really enjoyed the video. Very helpful, with a lot of good tips I would have otherwise not done. Checking out the comparision video next.

    Great and informative video. I just subscribed when I found this video, as well as your Chimay Blue comparison video. Belgian brews are my favorites, too. I'm looking for Tripel and Quad recipes for my own 5 gallon BIAB to attempt. I will continue checking out your other videos.

      That's awesome, and glad you enjoyed the video! This is the only strong Belgian style I've put up on the channel so far but it worked very well, and you could probably scale this up to 5 gallons without any issues. Hope to do a tripel or strong golden later this year. Good luck in the brew!

    I made some candi sugar the other day for a Belgian-style beer I am planning to do in the near future. It definetly took a while to do. Remains to be seen whether it was worth it.
    Definetly cheaper than buying candi sugar at least.

    I am fixing to brew Northern Brewer's Northy 12 Quad Extract. This helps before I start. If you can help me out: for the beer I'm brewing I have to add a humongous amount of yeast per the calculators. In the past, I have skimped on yeast I think it really bit me in the butt with off-flavors and cloying sweetness, causing me to dump or distill it. This recipe you only pitched 2 packets of yeast, correct? The tripel I just brewed I used 2 packets of dry yeast, 1 smack pack, and 11 grams of another dry yeast for like 380B cells. The problem is that yeast gets expensive, relatively. What have you found as you go on for brewing heavy beers and yeast dosing?
    Great channel. I am enjoying the heck out of it.

      I'd definitely look to my more recent videos on info like that. I have a Belgian quad I recently did which will be close to the northy 12 recipe and I have a video on techniques for properly fermenting high gravity beers from a few months ago. Hope that helps!

    Hi Steve! I’m looking to brew a quadruple as well. I see you used a D-180 candi sugar, but when I click your ingredient list, it goes to the D-45. Should I use that instead or use the D-180? I’m looking to make this as authentic as possible. Any help with this would be fantastic!! Thank you!!! 🍺🍺🍺🍺

    Hi mate. I'm gonna do ur specific recipe tomorrow. I only altered what you said. Mash 150 and a touch more spices. From 1/8 to 1/4 and 1/2 to 1 tsp. You find that is legit? Oh yeah, and adding a tiny bit sweet orange peel

      I made this recipe up mostly by myself if I remember correctly, but it borrowed heavily from the quad recipe in the "Brewing Classic Styles" book by Jamil Zainasheff. Great book btw.
