How to make Instant Pot Pho Ga or Chicken Pho

  • Pho Ga or Chicken Pho is the Vietnamese version of chicken noodle soup and oh is it delicious! Here's my easy recipe using the Instant Pot
    Serves: 4-6 bowls
    Using 8 QT Instant Pot
    Ingredients:
    3 lbs whole chicken
    1 onion
    1 knob of ginger
    1 shallot
    1 tbsp rock sugar
    1 tbsp chicken bouillon
    1 tbsp fish sauce
    1 tbsp salt
    4.5 quarts of water
    Season to taste: I added additional 1.5 tsp chicken bouillon and 2 tsp salt but please adjust to your preference
    Spices:
    1 cinnamon stick
    4 star anise
    1 tbsp coriander seeds
    bag or cheesecloth to hold spices
    Garnish:
    Chopped green onions, cilantro and thinly sliced onions
    Serve with bean sprouts, lemon/lime wedges, jalapeños, fresh herbs such as thai basil, sriracha and hoisin sauce
    Instructions:
    1. Scrub the chicken with salt and rinse thoroughly.
    2. Char the onion and ginger for a few minutes until the skin is toasted. If you don't have a gas stove you can do this using a pan. This step will give your broth a deeper smokey aroma.
    3. Roast the spices and shallot in a pan for a couple minutes till fragrant then place them all in the bag and seal tightly.
    4. Add chicken, ginger, onion and spice pack into the Instant Pot. Then pour water to the max fill line which was about 4.5 quarts.
    5. Add 1 tbsp rock sugar, 1 tbsp salt, 1 tbsp fish sauce and 1 tbsp chicken bouillon.
    6. Close lid, turn knob to sealing position and pressure cook for 30 minutes.
    7. While your broth is cooking, soak your pho noodles in water for at least 30 minutes and prepare your garnishings. Chop green onions and cilantro, thinly slice some white onion then mix them all together. Slice lemon wedges and jalapenos.
    8. Once 30 minutes is up you can either let it natural release or switch the knob to venting to release the pressure. Be careful turning the knob and I recommend putting a towel over it to prevent spraying.
    9. Remove and discard onion, ginger and spice pack. Remove chicken and let it cool down.
    10. Preparing your bowl. Cook pho noodles per package instructions and add to your bowl. Add shredded chicken, hot broth, onion & cilantro garnishes and fresh cracked pepper.
    11. Serve with lemon wedges, jalapeños , bean sprouts, fresh herbs, Sriracha and hoisin sauce. Enjoy!

    *3:27* that looks amazing. Can I use any stock for chicken pho?? Of course the chicken stock will be perfect.

    Is that chicken not overcooked? I don't own a pressure cooker so would do this on the stove and would assume the chicken would be really try from simmering for so long.

      Hi! Depending on how big your chicken is it would take anywhere between 1 to 1.5 hours to cook the stove. Throughout the cooking process you can check to see if the chicken is done by piercing a chopstick through the thickest part of the chicken. If you see blood seeping out then it's not done and continue cooking until you don't see any more blood coming out when you check it with the chopsticks.

    Can I make this in a 6qt Instant Pot? What should I do differently?

      Hi! Yes, you can use a 6qt pt! You can get a smaller chicken. Also, you don’t need to use a whole chicken, instead you could use just thighs and breast pieces if you aren’t able to find a smaller whole chicken. I would use the same amount of spices/onion/ginger. At the end when I season to taste with chicken bouillon and salt you can adjust to your taste. You might not need to add any extra since you’re using less water.
