That's insane that you guys did all the food preparation on ground before serving on the flight. Many people don't understand the logistics of how preparation for flights happen. You guys had to make sure that all the food was prepared and ready to transport to the correct airplane before the airplane landed. Not to mention figuring out how to portion the foods on the flight and working on such a small space to plate the food. Amazing work, Chef JP!
It’s a lot more complicated than it seems really. So you really cannot compare it to restaurant food, since a plane does not have a place to cook. All we can do is try our best to make it as close to a freshly cooked meal as possible.
