- This tart is a work of art and it tastes as good as it looks. With different textures of crunchy sable, chewy pistachio cake, creamy creme patisserie and fresh Raspberry filled with Jam is an explosion of flavors in the mouth. To garnish the tart I used fresh baby mint from my garden along with some edible flowers. I hope you enjoy the recipe

Ingredients
Sable
150 Grams Plain Flour
90 Grams Soft Butter
20 Grams Caster Sugar
35 Grams Cold Water
Pistachio Cake
30 Grams Chopped Pistachios
30 Grams Melted Butter
30 Grams Sugar
1/2 Egg
Raspberry Jam
50 Grams Frozen Raspberry
30 Grams Sugar
Pastry Cream
250 Grams Milk
3 Egg Yolks
50 Grams Caster Sugar
20 Grams Flour
1 tsp Vanilla
30 Grams Cold Butter
Instructions
1. Rub the butter and flour and sugar mixture until it forms a breadcrumb texture
2. Add cold water and knead gently to form a dough
3. Roll the dough in between a baking paper and refrigerate for 1 hour atleast
4. Line the tart tins and chill the tins for another 30 mins
5. Bake the tart at 180C/350F for 20 mins with the pie weights
6. Remove the pie weights and bake another 5 mins
7 To make the pistachio cake add chopped pistachios to melted butter, sugar and half and egg. Bake this mixture in the tart for 15 mins
8. To make the Raspberry Jam put the frozen raspberry in a pan with caster sugar and cook until it reduces to a jam like consistency
9. To make the pastry cream whisk the sugar and egg yolks and then add flour and whisk
10. Bring the milk upto a boil and whisk in to the egg mixture and cook until it comes to a boil
11. Add in Butter and vanilla and whisk to form a smooth cream
12. Assemble the Tart by piping cream and arranging the fresh raspberries. Pipe the Jam in the raspberries and garnish with flowers and fresh mint - Навчання та стиль
