the issue is i take the touch away from the defender but in many situations the defender manages to tackle me and my player freezes when receiving the ball

How about when u receive a lobbed ball and u dont press R3 but your player for no reason he will juggle the ball up instead of controling it down and start running which delays his start of the run which will cause the defender to catch up .
